One of the most beloved Chinese-American dishes, offering a delightful blend of sweet, spicy, tangy, and savory flavors all in a single bite. General Tso’s chicken is made by frying small chicken pieces until they're crispy on the outside and tender inside. The chicken is then tossed in a savory sauce made from ingredients like soy sauce, sugar, vinegar, garlic, ginger, and chili peppers. This sauce gives General Tso's chicken its distinctive combination of sweet and spicy flavors.
Serves 3-4
8 oz chicken thigh meat, boneless & skinless, cut into 1 inch chunks
Sesame seeds and green onions for garnish (optional)
4 cups of cooking oil for frying
Chicken Marinade:
2 tsp Shaoxing rice wine
⅛ tsp salt
⅛ tsp white pepper
2 tbsp starch
1 egg + 1 tbsp water
1st Dredge:
½ cup cornstarch + ½ cup all purpose flour
2nd Drege:
1 egg + 1 tbsp water
¼ cup cornstarch + ¼ cup all purpose flour
Sauce:
3 tbsp cornstarch
¼ cup water
1 tbsp cooking oil
Garlic 1 tbsp (2 cloves), minced
Ginger ½ tbsp, finely minced
¾ cup water
2 tbsp Shaoxing wine
5 tbsp soy sauce
6 tbsp granulated sugar
3 tbsp rice vinegar
2 tsp Chinese chili flakes (optional)
½ fresh chili pepper or 6 dried red chili peppers (optional)
1 tsp sesame oil
Instructions:
Step 1: Prepare the Sauce: Start by mixing cornstarch with ¼ cup of water and set it aside. In a pan over medium heat, sauté garlic, ginger, and peppers. Add the remaining sauce ingredients and bring them to a boil. Stir in the cornstarch mixture, making sure to mix it thoroughly. Cover the sauce and set it aside.
Step 2: Marinate and Dredge the Chicken: Mix chicken pieces with the chicken marinade. Add cornstarch and one beaten egg mixture. Dredge them in a mixture of cornstarch and all purpose flour. Then dip chicken pieces into the 2nd egg mixture and dredge for a 2nd time.
Step 3: Fry the Chicken and Finish the Dish: Heat oil to 375°F (190°C) and fry the chicken until it's golden brown and crispy. Toss the fried chicken together with the prepared sauce. Now, it's time to enjoy your meal!

Great version of a classic favorite! Question(s): Once you place the chicken in the fryer/wok, do you have to increase the heat and bring it back up to temp? If so, what temp range do you keep the oil at? Great recipe!

Good question! I begin by heating the oil on a medium-high setting (but you can adjust it depending on your stove's power). This helps the oil temperature to recover quickly once you put the chicken in. I fry the chicken in two separate batches to make sure the oil temperature doesn't drop too much. You should aim to keep the temperature between 350°F and 375°F. 😊
