How to Cook Swahili Viazi Karai
If you want to try out a tasty snack this quarantine season, the following simple recipe will turn your plain potatoes into a sumptuous and great dish for your loved ones.
Viazi Karai, you will need the following ingredients:
✔️Five to ten potatoes (This depends with the number of people) my recipe serves 3people.
✔️One tablespoon of red chilli powder(optional)
✔️A tablespoon of turmeric powder/ food colour
✔️All purpose flour
✔️Small bunch of coriander (dhania)
✔️Two cups of all-purpose wheat flour
✔️One cup of water
✔️Salt and pepper to taste
✔️Ginger
✔️Garlic
✔️Oil for deep frying
Method/Process
1. The first step is to wash your potatoes and peel them , boil them for 5minutes or until well cooked but not over cooked.
2. Use a bowl and combine the wheat flour, coriander, turmeric / food colour, ginger + garlic and salt. Use the right amount of water to make the mixture into a thick paste.
3. When the potatoes are ready, pour off the remaining water and leave them to cool off
4. Make sure that the potatoes are well dipped into the mixture then deep fry them in medium heated oil.
5. Leave the potatoes to deep fry until they attain a beautiful golden brown colour and drain them using a kitchen paper.
6. Serve your Viazi Karai with some Kachumbari, ukwaju (Tamarind chutney) or roasted meat. Enjoy!
