Shorba Recipe
Rabia’s Shorba
Meat stews like this one are a great family meal option as they are a good source of protein from the meat, they are filling and flavorful, and it’s easy to make a larger portion last for additional meals. You can use different types of meat depending on what you find in the store that is affordable. For this dish, you will need a deep pot or pressure cooker and the following ingredients and spices.
Ingredients:
1. 500g bone-in mutton or other meat cut into small pieces
2. 1 onion, chopped
3. 2 tomatoes, chopped
4. 2 garlic cloves, chopped
5. 1 tsp ginger paste
6. 1 tsp cumin seeds
7. 1 tsp coriander seeds
8. 1 tsp turmeric powder
9. 1 tsp red chili powder
10. 1/2 tsp garam masala powder
11. Salt, to taste
12. 1 liter water
13. Fresh coriander leaves, chopped, for garnish
14. Lemon wedges, for serving
Instructions:
1. Heat a large pot over medium-high heat.
2. Add the mutton pieces and sauté until browned.
3. Remove the mutton from the pot and set it aside.
4. In the same pot, add the chopped onions, garlic, and ginger paste. Sauté until the onions are translucent.
5. Add the chopped tomatoes, cumin seeds, coriander seeds, turmeric powder, red chili powder, and garam masala powder.
6. Stir well and sauté for a few minutes until the tomatoes are soft.
7. Add the sautéed mutton pieces back into the pot and stir to combine.
8. Pour in the water and add salt to taste. Stir well.
9. Bring the Shorba to a boil and then reduce the heat to low.
10. Cover the pot and let the Shorba simmer for about 45 minutes to 1 hour, until the mutton is tender.
11. Serve hot, garnished with fresh coriander leaves and a lemon wedge on the side.
12. To break bread inside the Shorba, tear off a piece of fresh bread and dip it into the hot Shorba in your bowl.
13. Enjoy the flavorful and hearty combination!
