The first time you had it was the Hanoian way of eating Bún Chả. They dip rice noodles into the big bowl of sauce and meat, with a few herbs and probably lettuce (but a different type of lettuce which is soft and sweet, not the one shown here). No shredded morning glory or sprouts.
I'm Vietnamese and that's how me and my family eat bun cha -we wrap everything in lettuce and herbs and dip it in fish sauce - even better with the fried fish cakes wrapped in lettuce
The best bun cha i've had was in hai phong... She put sauce on strips of meat. Not that minced meat little cake as shown in your video (as is the most common way to find bun cha from my experience).
Sonny, I am curious to know if your team pre determines the time length of each video? This video lasted six min and twenty seconds. I understand a lot of content is lost to editing but I think with your character (humor) , your guests and overall content I could easily watch 30 mins of video and never lose interest. This dish is pretty similar to what it is in Hanoi, but slightly different in the way the rolling (nem rán) is made. Bún chả is a traditional dish of Hanoi which typically shows the culture of Hanoian's habit in eating. The sauce-fish is shown in the video is also a little bit sweeter than it is made by the traditional Hanoian's way. So, just come to Hanoi to taste the original flavour.
I'm Vietnamese and I drench the mix in sauce and turn into a soup pretty much lol and drink the left over , my opinion is best way to enjoy it, the sauce is very light
