Vietnamese Pork Spare Rib Soup w/ Potatoes & Carrots (Canh Suon)

My mom made this Vietnamese Pork Spare Rib with Potato and Carrot Soup often when I was growing up. It is comforting, warm, healthy and so delicious served with a side of white fluffy rice or over rice macaroni noodles!
Ingredients:
1 1/2 lb pork spare rib
3-4 carrots
2 potatoes
3 cloves of garlic minced
2 shallots
3 tbsp fish sauce
1 tsp salt
1 tsp sugar
1 tsp black pepper
1/2 tsp chicken powder
1 tbsp cooking oil
Garnish: chopped green onions, cilantro, fried shallots and chili oil if you want a spicy kick.
Instructions:
1. Cut spare ribs into bite size pieces and boil in water until impurities rise to the top. Drain water and rinse ribs.
2. Marinate ribs with 1 minced garlic, 1 minced shallot, 1 tsp salt, 1 tsp black pepper, 1 tsp sugar and 2 tbsp fish sauce for 15 minutes.
3. Peel and cut carrots and potatoes into bite size pieces.
4. Heat a pot with cooking oil and add 2 cloves of minced garlic. Cook till fragrant.
5. Add in pork spare ribs and saute for about 1 minute.
6. Add water to pot and bring to a boil then reduce to medium heat
7. Add in carrots and potatoes
8. Add in 1 tbsp fish sauce and 1/2 tsp chicken powder (you can add more if needed)
9. Cook until pork rib is tender (approx 30-40 min)
10. Before turning off the heat add in 1 crushed shallot
11. Garnish with chopped green onions, cilantro, fried shallot and black pepper. Serve with rice or macaroni noodles.
