A great personalization is malt vinegar in a very small spray bottle. Sounds crazy but the "mist" is fantastic for folks that don't like the big drips/drizzle of bottled malt vinegar. Something I have recently experimented with is adding just a touch of balsamic as well. I can't say its better, but it isn't worse either. It does give a completely different flavor profile. I live in the states so my family are still experimenting with the fish and batter to try and make it as best we can. Honestly so far, a great (and cheaper) option here is Swai. It is meaty and doesn't fall apart during cooking. We are still experimenting with beer batter vs. a tempura type mix. What I can say for certain though is that people should really try tempura battered hush puppies (you'll have to make your own), but that should be its own food group in my opinion. Love to see people try different foods they may have never gotten the chance to try otherwise.

Fun fact: long before he was dictator of the USSR Joseph Stalin visited London as an impoverished revolutionary to attend a conference. He stayed in an East End London boarding house and every day ate Fish and Chips, which he considered one of the finest meals a man can possibly eat for the rest if his life. During WW2 the British had to ration food supplies, the only food that wasnt rationed was fish and chips. This was to keep morale up. Fish and Chips has never been a 'cheap' dish, rather its always been an affordable treat and I'm hugely grateful to the fishermen who brave the North Sea and Atlantic to bring home the Cod and Haddock for our fish and chips.

Right - what Olwen said: I think that the fish Americans are used to are large ocean fish or farmed large fresh-water fish, where it sounds like the villagers are more used to smaller locally-caught river fish, in a region where there isn't a big variety or quantity of such fish. The villagers certainly seemed impressed by the size of the fish portions, and the amount of meat they represent! Compare a bit to eating anchovies in the west: these little fish are typically served with bones, but their very small and delicate, and are just eaten as part of the fish - the bones are more trouble than they're worth to remove. (Sardines are similar: the bones are small and delicate enough that adults and children can - carefully - eat them.) Salmon is usually canned with some of their soft bones. The bones are mostly harmless - they're part of the nutrition of eating these fish, providing a little calcium and other vitamins and minerals. Anyway, for the villagers, I get the impression that their locally-caught fish generally aren't factoy pre-boned, and are quite a bit smaller and more difficult to fillet than the fish we're blessed to have widely available in the USA, Canada, the UK, and elsewhere.

Actually in most of the Indian villages far of the sea, they've just got fish from the river or lake, not far of cat fish, full of bone, and you are unable to take out filet because there is no filet. The full flesh is filed with tiny bones. Those who lived in the mountain have trout and char. And they cook it grilled with a lot of spices, and most of the time overcooked because it's the use for any flesh because of the fear of possible infection. Then after it cooked, you barely can't make filet because the flesh will fall in pieces. If they do it in gravy it's then very spicy and for a western palate it's ruine the taste of the fish. (I like spices, and masala is not a trouble for me, but it's hide to much the delicacy of the fish for a French palate) (I've lived several years in an Indian family in India)

One more thing - I've always loved that the guys talk about the physical benefits of the food they eat and how much energy and power they hope to gain from their meal. I wish we had that attitude in the US. Here, it seems most people see foods as "good" or "bad" and will equate food with calories and how fat they will get if they eat it, rather that the energy their body will get from the food.
@supritatalnikar6744
@supritatalnikar6744 2 года назад
Ha ha... that's because most people in the US who are concerned with the calories they are consuming have the luxury of worrying about eating too many of them to gain unwanted weight or become unhealthy; these people are having such a big piece of fish all for themselves for the very first time in their life (probably wishing they could take that plate to their family and feed them a meal). I understand your point of view because I'm privileged enough to not worry about lack of food and instead about my calorie intake.

@@supritatalnikar6744 oh yes that's a GREAT point. that's a big reason why diet culture rubs me the wrong way. people will purposefully starve to look "pretty", meanwhile there are people fighting every day just to eat one meal. it's pretty gross that the US takes food for granted.

This is why I love trying different food from other countries and cultures - not because I’m obsessed with eating (this is somewhat true though) but because of how it lets you connect to a whole different way of life. It’s also so satisfying to see people from a completely different land enjoying food that’s so common here in the U.K. An open mind combined with good food is the key to a happy soul.

Where's the mushy peas, salt and vinegar for the chips? lol A good chippie tea (evening meal) is the best moment of the week, which tends to happen on Fridays for me and can be home cooked from ingredients bought at the supermarket or from a chip shop when feeling a bit fancy. Curry sauce on the chips is good as well as gravy. Is good to see the lads enjoy one of our favourite dishes and like to suggest another one that is a good evening meal among the common folk in England. Bangers (sausage) n mash (mash potato) with baked beans and gravy.

I am getting better at eating with my fingers . We all do it but there’s a talent for doing it with foods that have sauces and using Naan or another bread to pick it up . I’m (for the most part vegetarian) and have fallen in love with Indian food . The preparation time and home blended masalas are worth it ! Everything I was taught about the food pyramid is wrong . Look how healthy these guys are and there doesn’t seem to be an obesity problem. Where I stay the people go outside to pull fresh curry leaves for cooking . I’m so glad I kept my mortar and pestle . Now I know what I will use it for in the future -spices for chai and cooking . ( I used to make soaps and blend other things using my mortar and pestle ).
