Did you blend down the onions and peppers for a smooth texture, because I don’t see them in your finished product, nor have I ever seen it upon eating stuffing? Please explain if I missed a step , 🙏 thank you.

I can't seem to remember my mother's recipe. All I remember is she used the gizzard and liver from the chicken and bread (i think) to make the stuffing
Yes, you can use tomato sauce, just don't use the whole can. Also, add a piece of Scotch Bonet Pepper to give it a little kick and be sure to bake it. I'm from St. Thomas, USVI and I have never seen anyone eating it without baking it.
