John's Brisket recipe:
1. First trim the brisket.
2. Season it with sea salt and fresh ground pepper only.
3. Then set your Traeger grill to 180 and put the brisket in the Traeger fat side up with a bowl of apple juice.
4. Let it cook for 3 hours and then spray it with apple juice.
5. Then leave it in for another 3 hours at 180 and spray it with apple juice.
6. Then keep it in the pit at 180 for another 2 hours (this is now a total of 8 hours).
7. After the 8 hours pull it out and wrap it in butcher paper.
8. Then place it back in the pit and turn up the grill to 250 and keep it wrapped for 4 hours.
9. Pull it out and let in cool wrapped in a towel for a minimum of 2 hours until ready to serve.
