Hi and welcome back to The Kneady Homesteader Channel where today we are canning up celery in our pressure canner! I will be using tattler reusable canning lids along with a few button top metal (one time use) lids and sharing with you a jar failure. As always if you have any questions, please leave them down below for me and I will try my very best to answer them for you.
DISCLAIMER: This is NOT currently a tested and approved method in the current book so this is a rebel canning process. However it is my understanding that like Zucchini, it was once approved and due to funding has not been retested. So as always, do your own research.

How come you couldn't use the blanching water to fill the jars?

I don't use it because to me, anything that may not have been washed off will be in that water. any small particles of dirt. Blanching water is usually cloudy. Murky. To me it's not clean. I am REALLY careful and clean when I preserve food in jars. These jars will be sitting in an anaerobic state for months if not years! Where bacteria is at it's prime to grow and turn into botulism. So I choose not to use possibly dirty water. No matter how well you soak and wash, blanching is the final step in the preparation phase of the food you are canning. I choose to use clean, freshly boiled water to go into my jars. Not murky possibly dirty water. It is NOT worth that risk for me. Other folks don't see a big deal and use it. I don't have to eat their canned food. 😆 I owe it to you guys to show you clean canning. ❤️

Deborah's This & That Funny. I have never had any crack until I read someones post, then 2 days later one if mine cracked! So strange. Ive water bath canned for years.

@@TheKneadyHomesteader my water was not murky and I only used the first half/ top half so any dirt or anything was at the bottom. I do understand what you mean though.

My name ie joyce I'm 81 I've canned since I was 18 . Over the yrs I've canned off and on . I would have been a canning fool if i would have had RU-vid back then .i have watched so many of you ladies and since Oct i have been canning . Today I'm canning celery how smart . I have been having a blast .THANK YOU LADIES. I bought 6 heads of celery so I'll see how many jelly jars I get

Joyce-I am 71 and right there with you. I'm retired and live alone so most of my canning is done in pint and half-pint jars, except for broths and tomato sauce. Once I discovered I could pressure can 4 pint jars in my Power XL pressure cooker the world became a beautiful place to be. I recently purchased a Presto 23-qt so I can do more jars at a time! Don't want to waste those sale prices!!!

exactly! and even though you check those jars, sometimes a small hairline you can not see! it's earning stripes on your canning badge! LOL

My mother has been canning for almost 70 yrs. She still has the occasional jar failure because JARS ARE MADE OF GLASS, lololol.

Perfect timming, celery is on sale and I bought a boat load to can. Since I've started pressure canning nothing is safe from being jarred up. Lol thank you sweet mama, happy canning.

I feel the same way!! My hubby thought I was going overboard with all my ideas so I stopped for a few mths. Now I've noticed I've been in a ho-hum mood and now I know why sooooo I will be buying some celery and anything else I want to can😁😁

This is amazing. I can't wait to start canning. My brother told me Sunday he may have a canner for me that he doesn't use. He's not sure what type it is or if he can find it. I'm keeping fingers crossed.

Beautiful! I bet that celery gives any soup, stew or pot pie a rich flavor. I'd actually finely chop some up and try in a dip! Question: I noticed you don't can the leafy parts of the celery. Is it because the canning process would just disintegrate them? Usually the leafy parts are really rich in flavor. Just wondering.

Thanks for showing the cracked jar, yes things do happen when canning regardless of how long we've been canning. Another thing I do is, if I find a jar in the pantry that sealed when it came out of canner but is no longer sealed, i dispose of the food. Wash and sterilize the jar. By all means wash your hands thoroughly before handling any other food. And yes, use the liquid, not only for flavor but also vitamins and minerals are in it. We do a combination of chopped celery, carrots and onions and use it as a base or addition for a variety of dishes, mainly chicken noodle soup , vegetable beef soup and stuffing ! We usually layer the veggies and it looks so pretty!! Thanks for your video.

So glad I found your channel... I learned a lot from watching this video. We have celery in the garden and now I know I can pressure can it and that freezing is not my only option. I didn't know you had to crank down on the Tatlers when they came out of the canner. Was wondering why I had such a high failure rate. Thanks!

You answered a question for me, as I was unsure as to whether I could use the Ball quilted 240ml jars in the pressure canner. That size is ideal for some of my needs, but until now I have only used the pint and quart sizes. I have been trying lots of produce in my All American 910, but some things I don't need in such vast quantities, so the 240ml jars are ideal. I have tried parsnips as well, but I wish they could be done from raw, i.e. cold pack. Parsnip seems to be one of the few vegetables that is listed across sites (Ball, USDA, Centre for Food...etc) as having to be hot packed. When you mentioned the 'mush factor' that is what I was dreading with parsnip. We look at processing times, but realistically, the veg is in the canner much longer as the canner gets up to venting and then vents for 10 minutes. It seems a lot for parsnip quarters, but I haven't tried them yet, so I could be wrong. Out of interest, do you/ others stick to the 2" level of water in the base of a single tier pressure canner for the 240ml jars, or do people find that they are liable to float and thus add less water to the canner? Any advice gratefully received.

I do soup base mix with onion, celery, garlic, carrot, since i put that in all my soups and I can add other stuff from there. I should do celery alone

Hello for the 1st time! I know this is a couple years old but I wanted to thank you for this video. I couldn’t find a recipe for canning celery on its own. So, Thanks! I also have a tip for you when it comes to debubbling the jars! I put a small amount of food to the jars then add some water debubbling at that point. I then fill the jars with more food then add the water again. It is really so much easier to get rid of the bubbles. Especially when I can meat. Those darn bubbles can hide out pretty good so by doing it this way, it is much more effective. I hope this might be of some help to you and your viewers! And Remember, GOD is So Good!

Not having celery stresses me out. I don't use it often but there are recipes that call for it and I have to run out to buy it. I started freezing it and now will can some up too. THANKS Heather!! Now to find jars..LOL!!!

I can’t find the approved recipe for canning plain celery, how did you come up with pressure time and how did you determine it will be safe?

Per USDA guidelines, it’s not safe to can celery on its own. This is rebel canning. It is safe to dehydrate celery.

Sharon Edwards you think the FDA cares about you that you blindly trust them? What ever they said is good is most likely bad and vice versa. Look as Aspratain it is pure poison and causes cancers. It also converts those 2 diabetes to type 1 yet FDA says its good...especially for diabetics. Do some research.

​@@mizg1595 It actually has been tested in the past. It may not be recommended, but there is also only so much budget for testing. It doesn't mean it isn't safe. :-)

@@msdixie1972 Sure. Back in the day, folks water -bathed meat and other low-acid foods and dosed their kids with turpentine. I agree that not all “rebel canning” is necessarily unsafe, but just because great-granny did it and lived is no safety endorsement either. I answered a specific question with accurate information based on current food safety guidelines. It’s up to the individual to make an informed decision about their own home canning practices.

I'm new to canning. I just have a waterbath canner, not a pressure canner. Wish I had one! I also had no idea you could can with just water, that must be due to the pH level and using a pressure canner instead of waterbath. I'm saving this video for future. Thank you!

I cook my celery until half cooked. Still has a crunch to it. Cook about 25 min. Depending on how thin you cut it up. Test it with a fork. Add your celery to your hot jars. Then add to your pint jars , a 1/2 teaspoon of canning salt . 1 teaspoon of lemon juice. Add hot water to hot jars. De bubble , wipe rim of jar, put on the hot lids and rings. Put it in a hot, not boiling water bath canner . Bring the water up to a full boil for 20 minutes at a full boil. Drain your celery before using it. I have been canning for 58 years. I finally got some celery canned today. I did use the blanching water for the canning because I felt the nutrients in water were worth it. They were pinging while they were still in the canned. All 20 half pints sealed and look beautiful. Thank you for sharing this with us.

Nice looking celery. I put up some celery alone in half pint jars along with some pints of celery and carrots mixed. Then put up some quarts of potatoes, carrots, and celery to use in stews. It will be so nice to have at hand this winter. Thanks for a great video, Heather.

I never use blanching water if you have any contaminates in your water, you can cause your product to spoil.

Never canned celery - good idea - but was wondering, why wouldn't you use the the water that you blanched the celery into fill the jars as it would have some celery flavor to it instead of the boiling water in your kettle . Just curious !

Heather, have you ever u this celery in things like egg salad or chicken salad. I wasn’t too impressed with no blanch dehydrating celery. I ground them up for celery powder. On a try blanch then dehydrate. Would love to use in these salads.

It's not recommended to can celery. I don't know why not, it's just another veggie. Mabe, it's the tough strings? The USDA doesn't have a recipe for celery. The times for processing are all over.

From what I understand, the USDA only has so much funding for canning, which is done every 7 years. If they don’t have the funds to expand the food to test, they just don’t. Zucchini is safe to can but one year they lost the data and wouldn’t invest in redoing it so they just left it out of the guidelines entirely. 🥺

do you still can your celery? I planted a bunch of it this year and wasn't sure what I could do with all of it. Does it get mushy when you go to use it? Is it okay to use in soups and stews or anything you are going to cook? I was going to dehydrate some, but never knew I could can it.

I wonder if this would help me preserve my homegrown celery too. I usually freeze the celery leaves for bone broth later. I wonder if the timing is the same for pints as it is for half pints? (Fairly new canner here, I’ve only been canning a little bit for the last couple of years so forgive me if my question is elementary ).
