If you notice how fast the F8F was closing in then you would see why that would be a bad idea, rolling scissors was the best route for this engagement and imo the 109 pilot did the appropriate thing in this situation, bleeding the F8F of its energy would have more than likely just resulted in a death.

Also the altitude difference as well, if the 109bhad the energy advantage to start with then yes that could work.
