Mulled Cider is a tradition around this time of year that goes way back, so I'm making some Elizabethan style Wassail!
Get in here and a Wassailing we go!

Mulled Cider, in the form of Wassail goes way way back to perhaps the Dark Ages of the British Isles. The term "wassail" evolved from the Anglo-Saxon "wes þú hál", which essentially means "Good Health to you!". So Wassail is a toast, a greeting, a song, an activity, and a drink. Truly a word for all seasons! Uh, but mostly for the Holiday season. It's around Christmas that we would go out amongst the apple orchards to Wassail the trees and bid them a healthy harvest next year so that we would have plenty of cider to drink in the coming months. Delicious boozey cider is truly the greatest Christmas Gift of all.
The Wassail I'm making here is in the "Lamb's Wool" style, which would have been popular in Elizabethan England. The recipe is pretty involved, so buckled up, this is going to be a long one!
Wassail (Elizabethan Syle)
Ingredients:
• 4 small apples
• 1 Orange
• Sugar
• Hard Cider
• Port Wine
• Maderia Wine
• Nutmeg
• Ginger
• Cinnamon Sticks
• All-Spice Berries
• Cloves
• Eggs
• Cognac (optional)
Process:
• Core 4 small apples and fill with sugar, I prefer a demerara here.
• Pierce the skin of the orange with 13 cloves
• Bake both together for about 40 minutes at 350 degrees fahrenheit, but keep an eye on them. These overcook easily.
In saucepan combine:
• 2 qts. or 2 liters of hard cider
• 2 cinnamon sticks
• 6 all-spice berries
• ~ 1 tsp. or 5 ml. nutmeg
• ~ 1 Tbs. or 15 ml. Ginger
Heat till simmering and let continue
In mixing bowls:
• Separate 6 eggs
• beat whites to stiff peaks
• Beat yolks to lighten color
• fold together
Add to the simmering cider:
• 4 oz. or 240 Ml. Port
• 4 oz. or 240 ml. Madeira
In large bowl mixing combine the eggs and the cider
In serving bowl arrange the baked fruit and pour the wassail over,
and enjoy! If you like this can be served in a slow cooker to keep warm for hours.

I worked in television for years, and I’m very impressed by your production values. The lighting is great, the editing is excellent, and the close up, slo-mo shots are beautifully done. The half scripted, but improvisational format works perfectly with the relaxed “we are just having fun here vibe” you are presenting. Probably the best example this side of the Bob Vila era this old house. Outstanding job. The content is also fun, and useful, looking forward to making the adult Butter Beer. Thanks for what you do, you make it look easy, and I know how hard that can be. 😁

How To Drink I’m Thinking about doing a fun twist on a cooking show, still in the visualization, and pre production phase. Probably using RU-vid as my distribution. Worked at PBS, and FOX, should be able to produce my own show. When I get closer to launching, I might have a question or two about building a RU-vid Chanel. I remember having a non-alcoholic version of this drink at my high school music department's "Madrigal Feaste"; essentially just a glorified festive choir concert and dinner for parents and guests with a pseudo-medieval theme (costumes, decorations, etc). As a part of the jazz band back then, I was simply a server for it, stealing bread and wassail whenever possible. Even without booze it was pretty good. We all pronouced it "wah-SAle".

I think the fancy pants word for 'scent thing' is 'pomander'! I remember reading the wiki page on cloves and it said you could stick a bunch of em in a citrus fruit to make a pomander, which I assume is a scent thing.

I heard it pronounced like "what's ale" "wussail!" I remember it because we went caroling, and we would knock on the door and shoot shout "wassail" and the owner would reply "drink ale" like it rhymed, and then hot beverages and figgy pudding were exchanged for songs.

I think you have described house- visiting wassail and there is also orchard-visiting wassail which is an ancient custom of visiting orchards in cider producing regions of England, in which incarnations and songs are given to the trees to promote a good harvest for the coming year.

when folding ingredients into "stiff-peaked" egg whites, add the ingredient/s, and using a spatula go under the mixture and fold it over itself. Do this in a smooth and looping pattern continuously, until mixed well. The reason your recipe says to fold, is because you want to keep the egg whites stiff, even after the other ingredients are mixed in.

Yep, fold means to mix without incorporating air, so you really want to do that with a rubber spatula "folding" upwards in long strokes, because the whisk attachment for the stand mixer is designed to aerate things (also I find it easier to separate eggs by cracking them into my hands and letting the whites run between my fingers, there's less of a chance for the yolks to break on the shell edges). I love when techniques end up being helpful across different kinds of cooking :)

That's strange, everything I've ever learned and read about folding egg whites says the exact opposite (I looked it up on wikihow just now to be sure, but this has been a litany in cook books and my mom's recipes all my life). You make the very specific folding motion where you pull your spatula toward you through the center of whatever batter you have and then *take the spatula out and bring it all the way across the bowl before bringing it down again* in order to preserve the air you have beaten into your egg whites and preferably add a bit more - not to *prevent* incorporating more air. Any kind of stirring or other kind of 'go-round motion' will deflate your egg whites. Yes, the whisk attachment for the mixer will aerate the egg whites on their own or even with some dry ingredients added, but as soon as you're adding a large volume of some other kind of liquid (as most batters are), it will instead beat the air *out*.

Wassail has been a tradition in our home for years now. It's wonderful stuff, and we bring it where ever we visit. This year in addition to our regular 2 gallons of wassail we're fixing a bowl of Smoking Bishop to enjoy with our Yuletide dinner. Our wassail recipe has many of the same seasonings, with some star anise, and a lemon or two. We simmer a gallon of cider and a pint of orange juice with the spices for a good while then add a gallon of white wine and a pint of rum, heat thoroughly and serve. I'm keen to try your recipe. The frothy eggs look a marvelous addition, rather like a buttered beer recipe from the 16th century we fix whenever there is a good snowfall.

LOL truly-talk to Babish. Folding is literally using a spatula to mix the egg whites and whatever else you're combining so you don't deflate the eggwhites. You turn the batter over ("cutting" it in half and turning it back to the top) Oh I don't know how to explain it-it's youtube for crying out loud...watch a video. LOL. God I love this channel. Funny and informative...as a wannabe mixologist you and the Bonneville collection are two of my new favorite channels.

I bloody love this channel. Cracking recipe. As an Englishman, I'd just add that it is indeed pronounced "Wass-Ale", and we tend to spike it with either whisky or rum. But I'd give it a go with Cognac any day :)

I drink mostly beer every once in a while, but man you make want to try alcohol a little more haha (mainly because you're having such fun making these drinks). I remember learning that wassailing song in primary school....long before I started drinking alcohol! You're saying it right. It's "wassal", no emphasis on the "sail". When I was a kid, as a school project, we'd each be given an orange and ALL of the cloves and just coat the orange entirely. Tie a ribbon around it and take it home, to hang it on the Christmas tree as a scented decoration.

I made wassail for Winter Holidays last year. It was the first time I ever made it. I used apple cider that went hard and made it in the slow cooker. I made mine with 2 quarts of hard cider and 3 bottles of Christmas ale, I used whole allspice, cinnamon sticks, fresh ginger, whole nutmeg (to taste), and 2 McIntosh apples cored. cloven orange and some raw sugar to taste. My household loved it when I tried it out on them first. My 21 and older family members loved it for Holiday dinner when I made it for them. I'll have to try your recipe this year. All the recipes I've seen for Wassail have Hard Cider in common. I think it's only how different times in history and how different areas prepared it that make it different yet the same.

Gosh, I can't believe how awesome these videos are. Came from Babish and I'm here to stay! It's so damn refreshing to have such high quality video production with the occasional "I'm doing this... probably the worst way possible" thrown in. That and the core eating had me smiling for minutes. :D (Edit: Ok, I'm smiling through almost the whole thing, really.)

LOL!!!!!!!!!!!!!!!! I so love watching you. I have heard of this drink but I had no idea at all what went into it. This is like eggnog....you have to be in the mood to make it.! I think I would try it even around Thanksgiving.

Revisiting these old episodes makes me miss the background jazz/swing music. I also like to do something of a mulled cider where I'll take some raw, organic, alcohol-free cider, let it sit in a slow-cooker for a while with a clove-studded orange, some cinnamon, nutmeg, and other baking spices, and then add either rum or rye to it when I fill a mug. It's a fantastic winter/Christmas drink.

This is crazy... My girl came home from work today, & said she had read an article in The Guardian, & it mentioned Wassail. "Have you ever heard of Wassail?" she asked. I grinned...
