⬇️⬇️English recipe follows⬇️⬇️ 清潤馬蹄露 (母親節2021)(4人份量) 材料: 馬蹄12粒 雞蛋1隻 純正馬蹄粉30克 黃冰糖100克 砂糖20克 清水1.2升 程序: 1. 馬蹄,清水浸10分鐘,去除泥漬。 2. 大火在煲內煲滾清水1.2升。 3. 加入已洗淨的冰糖。 4. 放馬蹄粉1湯匙在碗中。 5. 雞蛋,打在碗內。 6. 馬蹄,清水洗淨,切兩端,輕手刨去皮,切細粒。或放入乾淨膠袋內,用菜刀拍碎。 7. 馬蹄,放入冰糖水內,中火煲10分鐘。 8. 加入清水2湯匙在程序(4)內,攪勻。 9. 馬蹄糖水已煮滾,除去表面泡沫。 10. 加入砂糖,甜味會更有層次。 11. 加入程序(8)的馬蹄粉芡漿,一邊慢慢加入,一邊慢慢攪拌糖水,轉大火。 12. 雞蛋,打勻,一邊慢慢加入蛋漿在糖水內,一邊慢慢攪拌糖水,至完全滾起。 13. 完成,可享用。 Water chestnut sweet soup (Mothers' Day 2021) (serving for 4) Ingredients: Water chestnuts 12 Nos. Egg 1 No. Pure water chestnut flour 30g Rock sugar 100g Sugar 20g Water 1.2L Steps: 1. Water chestnuts, soak in tap water for 10 minutes, to remove dirts on them. 2. Heat up water 1.2L in pot. 3. Add in rinsed rock sugar. 4. Put water chestnut flour 1 tbsp in a bowl. 5. Egg, break in a bowl. 6. Water chestnuts, rinse with tap water. Cut both ends. Lightly peel, dice in small cubes. Or put the chestnuts in a clean plastic bag, beat by chopper. 7. Water chestnuts, put in the rock sugar syrup, boil at medium flame for 10 minutes. 8. Put water 2 tbsp in step (4), mix well. 9. Water chestnuts sweet soup has been boiled up, remove bubbles on top. 10. Put sugar, the taste will be more rich. 11. Put chestnut sauce in step (8). Pour the sauce slowly in sweet soup, stir the sweet soup slowly. Turn to high flame. 12. The egg, beat well. Pour slowly in the sweet soup, stir the sweet soup slowly. Wait for boiling up. 13. Complete. Serve.
