Ingredients
- 1 lb watermelon - 1/2 bunch asparagus - 4oz feta cheese
- 1/4 cup EVOO - 2 tbsp maple syrup - 1 tbsp lime juice - mint
- 2.4oz walnuts - 3oz spring mix
Equipment
- Large bowl - fork
1) Wash your hands
2) In a large bowl, ,combine spring mix, watermelon, walnuts and feta cheese. Tear up mint with you hand and add.
3) Find the good part of the asparagus y bending each stalk in half until it breaks. Discard the bottom half. Break the remaining stalk in 1 inch pieces and add to the bowl.
4) Add the maple syrup and line juice to the extra virgin olive oil. Use a fork to whisk until combined, then drizzle over the top of the salad.
5) Toss, serve and enjoy!
