The reason the dragon was flying away like that was because it was heading towards the center of the world, where the perch would be in the end.

Ender dragons fly to 0,0 and then start their normal behavior, regardless of dimension. That's why the dragon was running.

If you’re wondering, the dragon flew away because it’s trying to perch, so it flies towards 0, 0, where the exit portal is always placed in the end.

You'd think that the Wither would be more destructive than that. (Even just the major explosions as it reaches certain intervals in its health... let alone the dash and all the blasts when it takes damage...)
