me and my father go look for chanterelles in France and its my favorite thing to do. Though the big ones are satisfying to find, I find the little ones to taste the best. My mom will make the best risotto with them. This video brought back great memories I haven't been able to go do it cause of covid. can't wait to go back.

Dry and powder some of the ones you find, they kick up the flavor in the risotto beautifully. Hope we see the end of this in 2021. I’m ready to go back out and have fun outdoors again.

Mushrooms remind me of my teacher in high school (God rest his soul. Love you Ed!) He used to say there are old mushroom eaters and bold mushroom eaters, but never old bold mushroom eaters. Good ish man, happy new year!

The clear jelly like mushroom you found at the beginning of the video is called “cats tongue” due to the teeth on the bottom that resemble the taste buds of a cat. They are edible, but people usually candy them since they have little flavor, but a gummy texture.

My dad and my uncles were good at foraging for wild mushrooms on my dad's farm in Alberta, Canada. Another uncle of mine was also good at picking wild mushrooms. They were very tasty when they were cooked up. Thanks for sharing this video. Cheers!

I pick wild chanterelles every year in my back yard in Newfoundland Canada ! I was always told to cut them off at the stem instead of pulling the root from the ground . So that they grow back ! Been working so far

i have read studies done that showed no difference with fruition with either pulling or cut as long as the ground below where the mycocium lives is not damage,

Thank you for your channel. I am looking forward to trying the mushroom risotto. I am in Northern MN and we get chanterelles in the fall. Grilling them looks fantastic. I am looking forward to hearing the big news! I also really enjoy your fishing videos. I lived on the Oregon coast for a few seasons and it was amazing. I want to move back.

In Northern Italy, they stuff the Arancini with a Bolognese or Ragu instead of cheese (cheese is more southern Italy).... It would be fun to stuff arancini with a mushroom ragu. Best way to do it... make a ragu, freeze it in small ice cube trays so it is solid, and then press it in the center like the cheese ball.

Love going mushroom hunting. May I suggest that when you find an old mushroom you won't take to put it back into it's hole and cover it (or for any mushroom you don't harvest). Helps to keep things sustainable. I was told this by a forest ranger. Great videos! Happy New Year!

Went chanterelle hunting last weekend and we got around 50 - just an enormous amount! Wish I'd seen this video first! I ate some fresh but dehydrated the rest and ground them up. Mixed with chicken bouillon and seasonings, it makes great mushroom soup to be enjoyed all winter.

Hunted morels and oysters in the spring and lobsters and white chanterelles in the fall for the first time. I sm really excited for next year and hoping to find enough to put on the menu

Great video...You always enjoy cooking in the outdoors and have that love of life while doing it.. I am soo glad that when you were finishing the risotto that you didn't finish it with the dreaded white truffle oil..LOL It seems like these days everyone is using white truffle oil...It has it's place.. I am a retired chef, and back in the early 2000's I worked s a sous chef at a restaurant outside of Detroit.. The chef there was a mushroom fanatic.. It was kind of a mushroom master class for me...I was introduced to mushrooms that I had never seen before and have not since.. He mostly bought from wild foragers who would show up at all hours.. I can tell you that there is nothing like getting a 20 pound order of chanterelles during dinner service; knowing that you had to get them cleaned and processed before you leave for the night.. I am not confident enough to forage for my own mushrooms and now that I am disabled I have a difficult time walking, but last year I was tickled to find a morel in the woods behind my home..

You were here in Washington about 6 weeks too early for the chanterelles but they are plentiful (if you know where to go) and bigger than what you were picking. Been picking them for more than 50 years and have used them in many ways. Cooked with grains, similar to the risotto, is one of my favorites. Bulgar wheat with chicken stock, shallots, chanterelles and thyme is really excellent camp food also.

I love chanterelles, probably my favorite mushroom. Here in Sweden we often call them "Skogens guld" which translates to "The gold of the forest", fits well with your video title. The risotto looks super tasty. I'm not very good in the kitchen and usually just fry them in lots of butter and put them on some nice bread. Still tasty though ;)

From this side of the video, the boletes looked a bit more like suillus species rather than kings but both are good eating. I’m still finding a few chanterelles here and there up here in Portland. Happy foraging! ❤️
