It don’t hurt to hose down the engine. A car gets water up around the engine from driving in the rain. You don’t want to use a high pressure hose on it but low pressure water is no problem. I have washed my car’s engine for years and I just cover over the cold air intake filter when doing that.

I don't know the name of the product but what you are seeing as dried on filth under the hood like on the strut towers is actually an undercoating product. I have an all original 6k mile 2007 GT/CS that came from the lakefront area of PA and I ordered it from the factory. The dealership applied that same material to my entire engine bay and I swear it is the same type of coating. It looks filthy but it isn't. I was so pissed when I saw what it looked like at delivery but it was too late. However, that stuff being applied when the car was new is why you don't see any corrosion on the valve covers and the other aluminum parts on the engine. I have a picture of my engine bay you can use as a reference, 6k mile car, never seen rain or a dirt road, looks exactly like your 215k mile car under the hood. Just let me know.
