Fun fact for probiotic fans: "sourdough" isnt a legally defined term in the US, most supermarket sourdough bread has yeast (real sourdough doesnt) and vinegar for the flavor. WinCo supermarkets, however, offer real sourdough for under $5 and it has wonderful probiotic effects. My mom uses it instead of a supplement or lactaid.

Yes so many of them are not fermented at all they’ll just ass a leavening agent instead of giving it a proper rise. I can only digest long fermented sourdough and found out the hard way lol

Sourdough does have yeast, otherwise it wouldn’t rise, but it’s wild yeast (yeast is everywhere) so that’s why it’s more complicated to make.

You're a good mum! My mum used to do that when I was little, even when she was unwell herself! And at 47yrs old I can tell you that these are some of my best memories! I don't remember the pain, I only remember the love and safety I felt! I hope your baby is getting better and that you can finally sleep! But even if you have to put your child in bed with you, you have to get some sleep so you can continue to be strong for your child! xx
