@@girlinawolfhoodiewolf2426 Learn to can your own food, if you don't already know. If you do, then your half way there. Pressure cook 2 or 3 whole chickens. Then pressure can them, and all the wonderful stock. You'll be in heaven when you start eating and using that stock for recipes. Like risotto.

I've been making my own hot sage pork sausage for years. The ground pork sold in the supermarkets lack enough fat, so I use reserved bacon fat, which adds a touch of smokiness. This is a great time of year for anything with lots of sage in it! Merry Christmas, Kent and Shannon! 🎄

Great video...I like to cube the meat, put the seasonings on it and put it in the fridge overnight, then run it through the grinder. I find I get a better distribution of the seasoning and don't breakdown the fat.

Started cutting venison w/ bacon ends to save $$ years ago, Kent. Used to use Boston butt cut but the box of ends gives the fat to bind and the pork flavor. Always enjoy your channel. God bless you.

For the past year or so, I've taken up sausage making as a retirement fun passtime, Mostly pork - breakfast, Italian and Polish sausage. Now and then I'll do a beef summer sausage too. It's is very enjoyable to be able to customize the finished product to MY tastes and to know exactly what natural ingredients are in there, no wacky chemicals or who knows what. Thanks for sharing the recipe and the tips. Good eats says I.

YAY! You just answered my question as to what type of ground pork to ask the butcher for so I can make German Meatloaf. It uses 1 1/2 lbs of Ground beef, 1/2 lb Ground pork. Had zero clue what part of the pig to ask the butcher for.

venison pork sausage has been one of my favorites since the ealry 1960s, expecially when spiced as chorizo, or, as my late uncle Gary made it into a dry, aged salami, I wish some of the cousins would have taken an interest, unfortunately I lived too far away, but that venison/pork salami was amazing

Years ago one of the reasons I loved December is that a co-worker would go deer hunting and if luck was with him he'd come back with a deer or two. He'd have it processed and I'd get enough deer sausage and links for my freezer to last me six months. Thank you so much for these instructional videos on how to handle and process freshly harvested deer. Only had a general idea about it before; now I know.

Cowboy, this brings back wonderful memories. The day after hog killing day was sausage making day. I got into a bit of trouble cuz i just couldnt wait for Grabdma Hewitt to get there to make sausage. As an Alaskan, I'm very familiar with pretty much every form of meat preservation there is. Jerky is probably my favourite from a survivalist perspective but as an avid cook, I gotta say sausage is my preferred preservation method. The way you can mix up different spices and seasonings and end up with something unique.... It speaks to me

I’ve been making my own for years. I call the local grocer and have them save me the untrimmed pork butt. They get them in vac sealed 2 per package (13-17 pounds) then trim them and put them out individually. I want them before trimming and use 3# to 7# venison for each 10 pound batch. I usually make 20-30 pounds a year.

I make my own bratwurst every year, a good tote like a rubber made works great for mixing with the tall sides. If you have to you can put it in the fridge simply buy putting the lid on. I make about 30lbs at a time though so maybe it's just me.

A hint, after you got your spice recipe down pat, cut up the venison, and the pork chunks, and mix 'em up. Then sprinkle on the spices. Then put everything through the grinder at once. The spices will be mixed as well as the meats. Saves churning them up later. Thanks for the video. Jon

I make my venison sweet Italian sausage with 60% ground venison and 40% ground pork. It is still very lean, yet enough fat to stay together and it is moist. For venison burger, for the grill, I use 1 lb of ground bacon ends to 4 lbs venison burger. With a slab of smoked cheddar cheese, you can't beat it!!
