The underwater reflection issue you guys noticed is due to a process called "Reflection Mapping". Instead of raytracing reflections, or faking it with screen-space reflections, a premade, still image of the environment is projected onto a sphere and then mapped onto the shaded geometry. This is massively less intensive to compute, but falls apart easily in areas that environment map isn't built to be in.
