I made mine and wow. I cannot believe how well it cooks Chicken, pork it’s fantastic I might downsize my living so I am thinking about parting ways with my Egg, Drum and Pellet and going with Weber Kettle only

@@ksmith114 how cool is that…you made it. I love my kettles, I just wish they had more space. I have 5 of them because of the little space. I love my offset too…but the kettle is more convenient. For example, I’m cooking chicken thighs with the vortex right now. It took 35 minutes. Super simple super easy and super good. I feel ya with the downsizing and choosing the kettle!

I actually used the charcoal baskets and made a slow and sear sized charcoal basket. Works great for indirect cooking and searing without spending an extra $120. Great tips for those new to using a kettle!

Great idea! The only difference is the water basin on the slow n sear. I love my charcoal baskets for indirect with rotisserie.

The very best accessory for the Weber Kettle is the Spider Grills Venom! Turned my kettle into a true "set it and forget it" cooking machine.....

I have a DIGIQ DX3 that I use as well! I've had it awhile now and love it. I have a 2nd Weber Kettle that I'm thinking about getting the Venom for. You are so right...they make things so much easier! Was just given a 22 and bought that to replace the rusted grate. Can’t wait to try it. It will also allow me to install a lid thermometer on the opposite side of the handle from the vent, where without the deflector I would never consider.

Since one of the upsides of a kettle is how evenly it cooks, as long as your burgers aren’t too fatty and you don’t crowd them there’s no issue to grilling say, 10 large up to 13 small burgers over an even bed of charcoal. Done it a kazillion times. You just shut the bottom vent when flipping and open back up when replacing the lid. What I won’t do, though, is try to grill a full grate of leg quarters. That’s when indirect is necessary. Although I feel the SlowNSear is a bit over-rated their EasySpin stainless grate with the large coal access on one side is what Weber should’ve designed. First of all you’ll be able to fit more wings on when using the Vortex and yet the stainless should withstand the heat in the center. Secondly, if one side of your grill is cooking hotter than the other you can easily add charcoal to a side and/or spin the grate to even cooking. Good video. One thing to remember about the Santa Maria and such is that heavy accessories such as that aren’t the best for the three legged kettles, especially the 26” Weber. This is one of the strengths of the Performer. No chance of the leg sockets getting over-stressed and the bottom of the kettle warping and worse. Had so many webers I’d have to stop and think to count. Now I’m cooking with a PK and an KJ but still have some baskets, vortex, and SlowNSear EasySpin grate in shed from my last kettle, a Performer that somehow rusted all the way through.

Great points! Thanks for replying! Yeah, I agree about the burgers..guess I was thinking moreso of a person just starting out on a charcoal grill. It’s a great question, but no, there isn’t an upside down. Notice how perfectly it fits the opening in the grate. The way I have it positioned allows for greater heat dispersement because more charcoal is exposed. Technically you can use it either way, but I use it with the small opening up when I want to sear something at the end and also when I want to put a chunk of wood on top of it for smoke flavor (with a grate that doesn’t have the removable center or the removable center in place). Titan has now become Ashes & Embers, as I understand it. That Santa Maria is available directly from their website. Appears to work very smoothly from your video!

I have the baskets what is the best way to do prime rib? I'm going to cook one today with just charcoal

Hey Mitch, if you have a rotisserie that would be great. Otherwise, put a basket on each side and put the prime rib in between them. Set your temp with the vents BEFORE you put the prime rib on. 300 degrees if you are using both baskets. 375-400 if using just one. Rotate the prime rib every 30 minutes until internal hits 120-125. Pull the prime rib and lightly cover. Let rest 30 minutes or more. Enjoy!

@@mitchpratt3423 Use one chimneys worth and split between both baskets. Once in the baskets, adjust the vents to temp. The whole cook probably won’t be more than 1.5 to 2 hours
