Can this be done or achieve using chicken wire?

No. Chicken wire would work if the arrangement was in an urn or container to hold the chicken wire. But the tall centerpiece is in a shallow tray so the foam functions as a water source as well as the mechanic for holding the stems. ❤️🌸
