Love the recipes! As far as your griddle goes, I have a similar one & I realized after burning many things and/or things just not browning easily is that these griddles are made to be nonstick and when you add oil or cooking spray or butter before you use it, it burns almost immediately. Stop greasing it before hand and see if there's a difference! I know it's a hard habit to break 🤣
I love chopping and throwing in some broccoli or cauliflower into my boiling pasta noodles for the last few minutes when I make pesto pasta dishes. It sneaks in some veggies, and it adds in a contrasting texture!
Yes, if you fry up the tortillas they should hold up better, it’s just time consuming. I don’t make enchiladas very often, because frying the tortillas is not my favorite thing to do. Btw, I really enjoy your videos 😀
With all you do for your family, remember to give yourself a little grace here and there. I got so tired of my enchiladas falling apart, so I no longer roll them. I just stack it up like lasagna and call it good!! Happy cooking!!
Instead of frying my enchiladas, I either airfry them or bake them without sauce (with cheese)for about 8-10 minutes on 325 (just until golden) and yes, add more cheese once you add the sauce

I make a similar pesto alfredo pasta but I fry up some diced bacon first, remove once browned & cook the chicken in the grease. Also try adding spinach (& for those who like onions, sliced onions also cooked in the grease) it's divine.
Here's a little tip for corn tortilla enchiladas. Double up on them and put the cheese in between the shells. It holds up so much better. I don't cook them with the foil on either.
You can always pan sear or put the tenderloin under the broiler after it cooks in the bag.... It's called a reverse sear. Try toasting the rice (in a bit of oil/butter) before adding the water to absorb/cook. It's more authentic. The tortilla's can be dipped in hot oil for a few seconds and allowed cool a bit before rolling; don't really need to "fry" cook them. Tfs
When I make enchiladas I cook my stack of tortillas in the microwave for like 2-3 mins. Wrapped in some paper towels. Separate them as soon as they come out to keep them from sticking to each other. Prevents the breakage and cooks them all at once. But be careful because they're SUPER hot when they come out. I burn my fingers separating them everytime. 😂
Yes, I always fry the corn tortillas a couple of seconds on both sides. No cracking or tearing.Just make sure they are fresh tortillas. The older ones crack and break, no matter what. Those enchiladas look delish!
A tip to try before getting a ring light (unless you want to get one anyway), once you‘re happy with the settings (light and focus), change the setting from automatic to manuel. This will stop the camera from changing the light or focus during a clip when you move stuff around ;)
My enchiladas usually get mangled also but one thing that really helps them hold together is to brush them with some oil after you put them in the pan and before you put in the enchilada sauce. However mangled enchiladas are very very delicious!!! Yours look so so good.
Hi, Kristin. Honey, don't feel bad about burning things in the kitchen. I have been cooking and baking for almost 50 years and just this week, I made a fish chowder, which my husband and I both love, and I scorched the potatoes!!!! How does that happen? Keep your flour in the freezer. Fridges have more humidity than a freezer. We actually have a log at our school that i work at where we list items if they are not automatically listed on an invoice as a 'freezer' item. Butter, liquid eggs, flour, cornmeal etc that are pantry or fridge items go on our log.
To improve the taste of soup beans without adding meat try using a few drops of Liquid Smoke. Careful with the Liquid Smoke as it is quite potent and a little goes a long way. It gives the beans a nice smokey meat flavor without the meat. I got this tip years ago from a dietitian.

I bought the pesto intending to make that recipe but never did. I have to now it looks so good! And those enchiladas look so so good! I always burn the 1st few pancakes, and half the time my grilled cheese will be burnt on the outside and the cheese not even melted on the inside. 🤷♀️

A nice variety of meals. 😋 And there is absolutely nothing wrong with pancakes for dinner. I love breakfast for dinner, as most people do. We've never called them hoecakes here in Texas but we do make them a lot. Sometimes I'll even add a small can of creamed corn to the batter and fry them the same way for a sort of corn fritter. I grew up here making a lot of enchiladas. Ours would start with a big pot of chili. Using the steaks and making your enchilada sauce was great. What we usually did with the corn tortillas is lay them in the chili sauce/juice, for a few seconds on each side, to soften them up. If you leave them too long they will fall apart. But just softening them makes them more pliable so they don't crack or split when rolling them. And someone else mentioned layering them like a lasagna. I've done that too. There's nothing wrong with layered enchiladas. In fact I had a round baking dish that I used and it was perfect for making layered enchiladas. But regular baking pans work too and you won't end up with a 6" stack of flat enchiladas. 😄. In case you didn't know, there is an unwritten law that says your first pancakes are throw-aways. Doesn't matter what you do, you will not be able to eat them. 😜 I wasn't sure what kind of beans were in your vegaterien dinner. They looked like pinto beans. One of the dried beans we cook is butter beans and they are best when cooked with ham. The hoecakes go well with them too. BTW, I'm like you, I don't like onions either. But I do like the flavor it gives so I use onion powder a lot. I also use garlic salt or powder Enjoyed watching you make dinner. I wish I could watch someone make dinner in my kitchen. 😋

I've made a chicken pesto pasta dish very similar to yours, but I added in halved cherry tomatoes and a few handfuls of fresh spinach. I have to force myself to eat veggies sometimes lol. Also, I've started cooking my asparagus in the air fryer to get it nice and crispy. That pork looked like a super easy dish to make. Thanks for sharing!
next time Kristin. If you want to do a meatless bean, use some beef bouillon cubes in it and that will really step up the taste. Ham Beans is the best brand of beans. And you could also use salt pork slices and removed them. I always use them but don't eat them. I use them for the flavor but don't eat them just take them out when the beans are cooked--they are strips. I really like the hormel brand that you can get at kroger or the smithfield brand at walmart. they are where the hams are.

That little seasoning packet is vegan so you can get a bit of a ham type flavor without meat. Sometimes I don't want the meat either so I keep a small bottle of liquid smoke which used with just a few shakes is delicious! Cornmeal mix should not go bad that quickly! Next time keep things like that in the freezer. That's where I keep all of my nuts grains my cornmeal mix my flours. Anything like that especially if it contains oils which cornmeal mix does. Corn has natural oil. This is why I have a deep freeze and an upright freezer and I live alone! I store a lot of foods in there that can go bad easily but that cornmeal mix should have been okay in the fridge. Next time guarantee it and put it in the freezer. :-)

I love everything you cook, but the lack of onion hurts my home cooked heart. Just some unsolicited advice, you can make onion paste in your food processor or blender. It won’t dry out a recipe like onion powder can do at times. ❤️
I’ve never missed fresh onion in any homemade recipe except onion rings lol 🤷🏻♀️ I think fresh onion is too overpowering ... most recipes use it as a filler, not real seasoning or flavor I find. Onion powder or minced dried onion work well for us.
