What Alison Would Cook If You Came Over For Dinner This Summer | Home Movies with Alison Roman

It’s summertime, the sun’s out, we’re eating every meal outside, and because I bought a whole pig last year: we’re eating pork chops. Specifically, Pork Chops with Capers, Toasted Garlic and Caramelized Cabbage alongside some vegetable-forward, glorious, spectacular sides. These pork chops are THICK, best seasoned with only salt and pepper. Because waste not, want not, we sear gorgeous wedges of fresh cabbage right in that rendered pork fat (you could use broccoli rabe, fennel, or fennel bulb too). I’m also making what might be the most delicious thing you could possibly cook this summer (other than a tomato salad, which I also make): corn-on-corn polenta, because corn on the cob requires too much floss. I love when you do a full menu in a video. I often cook for my whole family and I know if I make an Alison menu, everyone will be thanking me for days for the “gourmet” meal - as has happened in the past.

The anti-corn on the cob explanation hit me right in my soul. I hate when it’s the only option for corn at a cook out or dinner party. Cause EVERY TIME I have to go into their home to get floss or a toothpick and I get lost LOL.

By providing suggested substitutions or suggested measurements, I've really learned how to "season to taste" and use in season produce while following your recipes. That'll do, Pig.

I love that you are proselytizing buying the whole pig! My husband and I did a pig share about eight years ago, and the pork chops were so amazing. We said if people only knew they would never buy factory farmed pork.

OMG this whole menu looks amazing and right up my alley! Going to farmer's market (fairfax ave) tomorrow and will get 2 beautiful pork chops!!! I love your polenta recipe with corn on corn and can't wait to make it as well - my favorite as of last year is Rancho Gordo's polenta which I always have at least 2 bags of in my pantry (along with many of their scrumptous beans). Makes me happy that I'm not the only one that gets excited at at the color of fresh amazing butter - I do the same when I crack an egg and that yolk resembles the beauty I see when looking at sunflowers this time of year! YUM YUM!!!! Thank you thank you!!!! xoxo

Yum yum yum! We love pork chops, but still need more sauce. Easy peasy to open a can of butter beans and serve it up as a side. A little seasoning and they’re delicious over the pork or with the polenta (I just bought packets of the stuff on Gilt). Everything there looks delish . It’s a beautiful table. (Oops, I almost forgot that fabulous looking cabbage. More deliciousness - unless I make my homemade slaw.) cheers!

There are so many fun and delicious things to make with corn, and it’s so “summertime,” like tomatoes are. Looks like a great meal. Love that cut of pork chops too, and like you I never know what to call it and describe it like you: it looks like the pork counterpart to a T-bone steak. And I buy them thick too..

Whenever I think cabbage, I think kool sla (cole slaw) and my childhood go-to was from Nate 'n Al's in BH. I wonder if their sla is still the same -- haven't been there in decades. Having a pork chop for lunch today. With apple sauce. A longtime favourite combination.

I really respect that you went with induction for your new kitchen. I think it’s really much better than gas for cast iron and carbon steel. It’s more efficient and safer and just better.

I'm happy cabbage is getting some love. It's delicious, can be prepared a lot of different ways (but I have to believe that sauteing in pork fat ranks very high on the deliciousness scale) and it is relatively inexpensive.

This looks so delicious! I do have a question about stainless steel tongs. I’ve heard conflicting info to use silicon/wood utensils in cast iron and nonstick pans so they don’t scratch. Should I be using stainless steel always and forever!?

It has been safe ti eat pork at medium rare for about 50 years now. When I sous vide pork I usually set the temperature anywhere between 134F to 140F at the highest = then a quick sear and it's perfectly pink in the middle, juicy and tender. Nothing like the flavor and texture of medium rare pork

She got married and I believe this is their home….check the last 3 or so videos. She has a little country store, I believe where she lives is upstate NY, and she has not introduced her husband on video, although she may have said his name. But I forget it…. I love her new kitchen! A little bit country, a little farmhouse style it looks to me.
