So with "consistently moist" plants do you ever fully saturate the soil to the point water comes out of the drainage holes or do you only top off the water a bit at a time?

Since buying your plant parent book and a light meter all my plants are really happy so I decided to try a peace lily again. The one I bought has 5 blooms on it and more trying lower down. Should I cut some off ? Also it has roots appearing under the pot. Should I repot ?

I water around top of soil and some parts are still dry so you end up overwatering. How do you remedy this problem?
