helloo! for the sauce i would totally recommend air frying the tomato and peppers to get a char flavor, and also air frying garlic and shallots. its so good! im lao and doing this is nearly identical to how my mom would make it :)

pro tip for you and weylie (from a chef) : use the back of your knife when pushing/gathering the food you chop. when you use the sharp end, you’re wearing it down more over time. it can be tricky to get in the habit of it, but i find this change in technique sets apart home chefs from someone who takes cooking to the next level. taking care of your tools in the long run is crucial. keep it up!

Hey!! I'm Lao!! So happy you're discovering Lao food! For the jeow mak len, if you roast the tomatoes a little, your sauce is going to be even more bomb! That's how my mom makes it! She also adds roasted shallots in there! Try it!

I make that rice cake/mushroom dish. I usually just add what ever veggies I have in the fridge. And the sauce is never the same. As for the tuna curry, I never thought of using tuna in Japanese curry. That may be my lunch tmr. Thanks for the idea.
I love jeow maklen it’s one of my favorite Lao sauces! Next time try charring your tomatoes, garlic, shallots, Thai peppers and green onions before mixing it with the sugar and fish sauce. I also like to add a little bit of padek to mine to give it more umami haha. Try it you might like it! :)

I made myself a nice meal while watching this, I had some jasmine rice and leftover chicken breast, I fried up some fresh Broccolini and I added coconut amino’s, and sesame oil and then I added in my chicken that was already cooked, And then once that was done I put it on top of my race I put on some more coconut amino‘s and lots of Sriracha! So good And I’ve got my big Korean spoon lol 😆 i’m learning so much from all of you guys. Mostly the girls like Jen and your wife The whole circle I guess! Thank you
