Today's video is the 3rd in a series of What I eat in a week video and was originally inspired by Mina Rome because I love her videos and she recently made a "Everything I eat in a week realistic and easy" video, which was a great insight into easy vegan options. I eat a lot of food that I have meal prepped, along with foods I can throw together, and more luxurious and time consuming plant based meals on the weekend!

I find your 'chaotic nature' to be even more inspiring. I can't speak for everyone, but I always feel like I am saying, 'oh next week won't be as crazy and I'll be able to be better at ____'. But it turns out next week just offers up more chaos. Which is good...means we are out there doing things. I say this as a reminder to myself, too. Keep doing what you are doing and thank you.

As for being a “proper RU-vidr”… can I just say here that you are!! Always!! Your “chaotic nature” is great… probably most of us here share your chaotic nature, but perhaps our story is not quite as exciting as yours currently is. Imho… you don’t need to be more organized, you don’t need to have chart-topping, high ranking content… you just need to be you and to keep on spreading your inspo and continue to share those little bits of the joie de vivre that remind us all of how precious life can be when we appreciate the little things. OK… massive run-on sentence there but I just wanted to say that your kind heart, your fierce mind, your brave spirit, and your passion for this life and this planet make you the “best RU-vidr”. How does it feel to have those papers officially rubber stamped… and now you can move on with the rest of your life. YaH!! Who thinks that you are not doing anything!? Just because you're not posting twice a week? I mean, c'mon. It's your life. And btw, I really liked this "disorganised" video :D On as side note (which might sound a bit nerdy): to have less colds during this season it is advisable to eat less bread and pasta (anything made of wheat) as it is very mucous producing. And that's what congests us and we expel when we "catch a cold" (a bug), which is our bodies chance to clean up the system from that excess mucous. And also to consume less sugar as it's highly inflammatory and suppresses our immune system. Just thought I'd share so we can all stay healthy this season.

Personally, I hate to cook and am a very picky eater. I'm mostly vegan, but tend to eat the same foods over and over. The days of leftovers are my joy. No cooking, just heating up! LOL That's why I'm so amazed, Immy, when you sometimes say you are just learning to cook. Watching you, it just boggles my mind how competent you look as you prepare and cook foods. I would find that sort of activity very intimidating. 😉 Fun to watch, though, so thank you for sharing your life with us. ♥♥ I do have to say, though, that my favourites of your videos are the vlogs... hiking in beautiful countryside, seeing the love between you and your partner, and other fun stuff that you do. It's a pleasure to know you through this YT medium.
