Squids could be smaller, but also bigger. It depends on the Species. I think it fits for them.

The Minecraft squid really is strange. My biggest problem is of course that they don't drop calamari, but there's also as you said they only have 8 tentacles. But the thing is, you can't call something that dumb an octopus, octopi are smart. And blue? Most squids aren't blue. As for size, squids in real life can range from an inch to 15 meters.

You definitely should've chosen a huntsman or wolf spider for the size reference instead, that way they would've been at least a tiny bit hittable LOL

Man, you really won the biome lottery with this seed. Reminds me a lot of Beta's crazy world generation, especially in that savanna area where you were singing while looking for llamas. Also, accurate spiders would severely outclass baby zombies in the annoying & dangerous department lol

The 8 "legs" are called arms, and the 2 long "legs" are called tenticles. Also, in minecraft we are tall.

Instead of having squids be their normal size, add in the biggest one (Colossal squid) with a chance to randomly spawn in. Or if you want to know where each squid is at, make them all that size

If Minecraft mobs followed the same laws of size as real organisms, the Ender Dragon would be way smaller, because Square-Cube Law. If the Ender Dragon was real, not only would it be too big to fly, but it might even collapse under its own weight.

You forgot one thing (I bet it's just hard to do with a datapack). Since the cockatiel parrot is much tinier than the Macaws. And the Amazonian green is also a bit smaller than the Macaws. Plus I think Ocelots are bigger than house cats.

20:58 Salmon actually have a really interesting growth cycle. If you’re looking at salmon under the condition that it’s in a river and it’s not spawning season, they look like your average trout. But DURING spawning season… hoo boy. Many species of salmon will make their way to the ocean and go into what I call “H0rny Mode”; they double in size, completely change their coloration, and even morph the shape of their skull. Now, since the salmon in Minecraft are able to live in cold ocean biomes and have that distinct red body, the Minecraft salmon are perpetually in H0rny Mode and thus should be much bigger (approx. half the size of the player character; ~3ft).

Cave Spiders will make it unplayable in hardcore... It's a NO for me xD
