It's good to see him feed his staff. Almost half of the chefs and restaurants out there dont offer staff meals. So its basically us working 8 hours on an empty stomach.

This story is SO heartwarming, but reading the comments made it even better. Everyone is just touched by all the passion of chef Keizo. People really underestimate what it takes to make a good bowl of ramen. Especially the time it takes is really nerve racking. I worked at a ramen store the time I lived in Japan and seeing the Enjoyment on the peoples faces eating a hot bowl of ramen in the winter was truly an experience i would recommend to everybody. This man right here deserve a medal for what he did!

What a stunning video. Japanese cuisine is really art, especially ramen. The amount of work that was put in to a “simple bowl” is humbling. A master at his craft who put his patrons far ahead of himself. Damn near had me crying at the end. Hope he receives everything he wants and then some

Yo, no dude seriously. Ramen is special to everyone who eats it. Even the terrible ramen. Here's my ramen, and it's dirt cheap. This is the ramen I make my old best friend when he comes over to visit. We've been eating this for almost ten years now, we are thirty now. He doesn't know how to do it or what I put in it, and he will never know. He just knows I make the best shitty ramen soup he's ever had and that makes me happy. Damien's Beef Ramen: 2 packs beef ramen (I use Sapporo Ichiban Beef Ramen, which is 89c in Canada but hey that little extra makes up for it) 1/2 cup of mixed frozen veggies (I use frozen mixed carrots/peas/corn. You can use whatever frozen veggies you like, frozen veggies are hella cheap and good for you.) Black Pepper Worcestershire Sauce (remember to shake the bottle). *This is one of the sauces they use for Caesars, if you drink those or know that drink, or want to know what to Google. Read the damn instructions on the back of the bag. When the water is boiling and the noodles are juuuuuust cooked the way you like them, take them off the heat and throw in the frozen veggies. The veggies will cool down the ramen, stopping the noodles from cooking and allows the broth to be served quicker at servable temperatures. The veggies also will be cooked and heated through, and I prefer my veggies a bit crunchy but hot. Shoot one or two squirts of Worcestershire Sauce, a bit of black pepper to taste. Bam, a less-than dollar meal that goes a long way. It has a savory flavor, the sauce brings out the beef in the broth and makes even the worst ramen a bit more tolerable. Pepper always helps and you can steal packs of pepper (and salt if needed!) from cafeterias, fast food joints and the like. Frozen veggies are dirt cheap (In Canada, its like 1kg for $1-3) and often on sale. They are SO GOOD FOR YOU especially on a college diet. A half cup of veggies can give you at least a boost of nutrients, and NEVER boil the fuck out of them. The problem that everyone does is overcook vegetables, seriously just add them the the hot ramen when you take it off heat and when they're heated through they're DONE. The salt in the broth will salt the veggies as well. YUM. It's what two thirty-year olds eat when they watch Netflix together because we still love it.

There's a place in my city that makes traditional-style ramen like this. It's phenomenal. Add that to the fact that he also sells it fairly cheap, it's a perfect meal. When I asked the cook why, he explained that ramen was what kept him going when he was in school back in Japan, and so he wanted to bring that to us here in America. To this day, economy and all, he will give you a bowl of ramen and a beer for 8 bucks.

This should be submitted to a short film festival, as a biopic of sorts on the story of a man's relationship with ramen. It represents almost poetically the love for a craft and the pursue of a passion, the rekindling of hopes after a loss, the respect for a meal so ingrained in a people's culture and history, the respect for the tradition and its practitioners, and the hard work and joy doing the thing you know and love, with such dedication that he does it on his birthday... The last bowl at the end and the homage is also a very nice touch. What the hell, why is a 17-minute ramen-cooking video making me feel? This is messed up and inadvertently brilliant for conceptual artsy reasons somehow? I'm definitely reading too much into a ramen video, I know, but maybe I'm hungry. But what the hell...On his frikkin birthday man...such a cool backstory to the cooking element. This deserves more likes. PS: and the music goes along very well.

Ramen Shack started out as a pop-up that continued due to its popularity. Eventually, the landlord raised the rent too high to maintain. Ramen Shack and Keizo deserve a proper permanent home.

"every ramen bowl has a story" Dude... Growing up, my mother would always make me "mega mei" is what she called ramen/noodles. My mother was born and raised from Malaysia. So, after school what she would do is start cooking up my "lunch" while I would do school work. One day I remember when I didn't have school work. I went to the kitchen and sat and watched my mom make mega mei. She would start with raw uncooked noodles she got from our local Asian market in Virginia, lightly boil them in water, soy sauce with fish sauce, garlic, fresh black pepper, green onion, Chinese green onion and fresh grated ginger. The reason she did this is because noodles soak up flavors. Once she blanched the noodles, she took them out to rest, she then used the base for the soup. She would get a new pan for the vegetables. She would blanch broccoli and spinach. In another pan she will boil eggs into it and or do a method where she would do a soft boil egg in the soup base. And let me tell you... Every time I make it myself, it reminds me of home and just watching her cook me food.

damn, the way you described it brought back memories for me too.... but it was my grandma's that i remembered... she would call it "yat bun meen" meaning japanese noodle, cuz it really started there and was brought to Malaysia after WWII, when she was still young... like @molibdenum said, its mostly called Maggi here in Malaysia, no matter what's the brand especially with older folks. grandma would just make a simpler one with the soup base from the packaging, some greens and an egg cooked towards the end before the noodle is done...

My friend, these ramen dishes look absolutely delicious. I normally do not watch a video that is this long in time, but i could not stop watching. You are blessed by God & are extremely talented. I can't imagine making any dish for 400 folks by myself until final prep. The most i may have done is 15-20 people. I may have to watch it again as i really like ramen dishes. I'm quite a bit older than you , a 56 yr. old irishman from Kentucky, but i am extremely impressed, & you, my young man are almost unreal. Personal question, why did you close the ramen shack ?, do not answer if you do not want to. Anyway, keep up your talent in cooking, & again, i am extremely impressed !
