Are you curious about Ottoman Princes and Sultan's favorite food? Learn 3 traditional Ottoman Cuisine dishes from a local chef in Amasya.
We are visiting Amasya City in the Black sea region of Turkey. A beautiful city at the foot of mount Harşena along the river of Yeşilırmak.
We will see a Konak Mansion house Hazeranlar Konağı goo.gl/maps/chWKy5gmoiN86xRKA to see an example of an Ottoman house. We will cook three traditional and easy dishes from Ottoman cuisine with local chef Murat Devek. Then we will visit the Sahzadash museum goo.gl/maps/4Brw9LdaSqnxtt6V6 to look at the princes closer that trained to become Sultan in Ottoman Empire.

Ingredients For The Dishes:
"Sakalaçarpan Çorbası" Green Lentils Soup With Roasted Noodles
About 1 cup green lentils, soaked overnight, cooked for 5 minutes and drained
1 onion
1 tomato
vegetable oil
2 tbsp butter
2 cloves of garlic
2-3 tbsp vegetable oil
about 1/2 cup roasted noodles
about 4 cup more or less hot boiling water
salt
For the mint sauce:
a cloves garlic, 1 tbsp vegetable oil, 1 tbsp butter, 1tbsp dried mint, some pul biber (red pepper flakes)
"Şehzade Çeşidiyesi" Shehzadeh Cheshidiyesi
about 200gr. tenderloin meat (cut in julienne)
1/4 to 1/3 apple (We used Amasya apple, use one that keeps it shape when cooked)
1/4 to 1/3 peaches (unripened almonds (çağla) can be used)
10 prunes
about 15 blanched almonds
2 tbsp vegetable oil
2 tbsp butter
4 cloves of garlic
salt to taste
"Unutma Beni" Dessert Forget Me Not
1 finger less then 1 cup molasses
1 cup water
1 cup sugar
slices of stale sourdough bread
ground walnuts
(I would recommend to serve with kaymak (clotted cream) or vanilla icecream)

Aah Amasya, been there quite a long time ago. More then 10 years ago and it still looks charming and not that much changed compared to my last visit. The Ottoman food that the chef was cooking looks very different then contemporary Turkish cuisine. Very good vlog Ayse, got to give you a thumbs up that you are trying to create a diverse content in your vlogs.

Amasya and all of the buildings are magnificent. So rich in history. The food that chef Murat made looked so delicious! I was struck by the name of the dessert as it is also the name of one of my favorite Turkish songs Unutmu Beni by Sezen Aksu. Thank you for the wonderful tour.🙏🏻
