That rice casserole sounded so good to me. I made it for my family last night with some pork chops and it was a hit with everyone. even though my mother isn't a fan of canned mushrooms and my toddler isn't the biggest fan of rice, everyone seriously loved it and got seconds. I will probably double the recipe next time !

Please know that this recipe is likely 40-50 years old, and back then, I doubt there was a fresh mushroom available for my mom to use. I imagine canned was her only option. I have not made it in ages, and wanted to make it like she did, so I just followed her very old recipe. I would not hesitate to saute my own mushrooms though, and use instead of the canned. Especially if your mom or another family member likes mushrooms, just not the canned variety. I'm so glad it worked for you, and thank you for taking the time to let me know!! I love how you always seem to cook with love. I want to do that too but it seems like I’m always rushed. Happy Birthday. Those long beans in the crockpot looked yummy will have to try. I buy that shredded beef from Kroger’s I to find it great for a quick meal. Not only in a sub bun but I make a rye and add a little beef bullion to make a gravy and put the meat in for an open faced hot beef, it’s also good in a omelette. I made Polish Horseradish soup today it was gray, rainy and cold Needed a warm hug kinda dinner God bless you both.

Hi Stacy! Late watching, but a belated Happy Birthday,! Everything looked sooooo good. My hubs loves salmon; I usually just bake it in oven in a foil packet and season with evoo, s&,p, Old Bay. Will have to try your glaze. And, oh, I so enjoy Trader Joe's 21 seasoning salute! Ran out and made a copycat recipe from Google. Thanks to last year's cooking extravaganza while everything was closed, had all but 2 of the ingredients. So just ignored the dried carrots and dried tomatoes and voila! Came out great! Think I'm on a roll making up seasoning mixes. Fun and a great way to use up spices I am heavy with! This is getting to be quite long but will finish up by thanking you for your momma's rice casserole. My hubs loves his rice made with consomme instead of water (like HIS mom made it). That was my only way to use the consomme but now you've given me a much appreciated other. Think I'll do this week! Big Hi to Tim and hope y'all have a great rest of week! Stacy, I make that same rice but I also brown up a pound of lean ground beef with the onions and then top it with Swiss cheese. My son calls it French Onion Soup rice. I love it because it’s such an easy meal to throw together and serve with a side of green beans or asparagus. I hope you had a wonderful birthday!

You are such an adorable couple and what I strive for my own marriage to be. Y’all are very inspiring! I love that you have smaller portioned meals. It’s just me, the hubby and sometimes my son (teenager off doing his own thing a lot) so it’s very helpful to have portions that are right for a small family/couple. A lot of nights it’s just the 2 of us and my hubby won’t eat leftovers so I try really hard to not make too much, maybe just enough for my son when he gets home or for me for lunch the next day.

We tease each other a lot (which some subscribers misconstrue as something that it's not) and we do have arguments, though those are not included on camera. We put God in the center of our lives and our marriage, and strive to give 150% to each other. We've both commented many times that if you don't feel like you're giving it all and maybe your spouse is not, then you're not trying hard enough :) I know it's so hard to cook for one or two (or even two with a teenager) and I do hope some of the meals and ideas help you guys with cooking at your house. @@LetsCookYall Stacy that is a beautiful thing! My great granny gave me words of wisdom before she passed away. Her husband was shot down in WWII and is still listed as MIA. She said it would have been easier for her to move on as a widow, remarry, etc but she chose to keep faith that he might be found alive. She told me she chose to love him every day, to live as a married woman until she had confirmation he was gone, to pray for him multiple times a day. She told me the secret to a successful marriage was to always pray for your spouse and to wake up every morning choosing to love them, by choosing every morning to love them unconditionally, no matter how much they infuriate you, gives you a chance to find one small thing they do to make you fall in love with them all over again every single day. It’s stuck with me all these years because her heart was so full of love for my great grandfather and I choose to love my husband the way she loved my great grandfather. I spend a lot of time praying for him and I know he does the same for me. I can’t say everything is perfect, it never will be but I will say 99% of the time we are happy and the thought of a day without him is something I can’t imagine. He is truly my best friend and I love him more every day. As for teasing when we were dating I would hear him muttering shut up under his breath. Turns out he kept telling himself to shut up to keep from blurting out I love you. It’s a little joke between us now, in fact the inside of our wedding bands have shut up engraved inside them because it’s a silly way of saying I love you. My husband’s grandmother once heard him tell me shut up and tore him a new backside until we explained it was a joke between us and told her the story. We had to explain it to his mother as well because she was fixing to tear him a new one as well after his grandmother.

I didn't even really know my grandfathers (one died before I was born and the other when I was just 5), and my grandmothers died when I was in my early 20's, so I only have a few memories of them, and no memories of advice and wisdom from them. Your great granny was spot on - love is a choice. Actually, everything in life is. We have a saying around our house - choose to be happy. It's the same thing. We choose each day to be happy, to look for the best in one another, to love each other (in spite of being mad enough to spit nails or throw things), and we choose to work things out and talk through everything. Praying for your spouse is the single best thing you can do, hands down -- she did not steer you wrong. She laid the foundation for a beautiful life and a beautiful marriage for you and your husband. And I'm betting, she prayed for your husband from the time you were a small baby, that God would bring you the one person He chose for you, from before the foundation of the earth. How amazingly lucky you are, to have had her and her godly wisdom and leading. I loved your story so much about muttering shut up, and I know how easily that can be misconstrued, but to the two of you, it means SO much! I just love that!!! So sweet :) I think your marriage sounds an awful lot like ours, so I know it will be a happy and fruitful one. Happy Belated Birthday Stacy. Everything looks delicious. I use to make that same rice casserole but I had forgotten about that recipe. I dnk if I have ever made that for Mark and Hayley. We get the shaved steak from Kroger too. We cooked some last night for Philly Cheesesteak Sandwiches . We are eating it tonight as a repurposed meal in flour tortillas as a burrito. Even though I do love them, I am so NOT a fan of many other vegetables, including bell pepper and celery, so I routinely leave those out. Pasta with cotija cheese 250 g spaghetti or zucchini noodles 2 tbsp heavy whipping cream 1 clove minced garlic 1 tsp chili powder 3/4 c Kotija cheese Ground black pepper to taste 1/2 c cooked kernel corn Cook the Pasta as directed/heat zucchini noodles till tender Heat the heavy whipping cream garlic and chili powder on a low heat for five minutes add Cotija cheese and mix Top with cooked corn Add diced chicken shrimp or steak strips for protein

Ms Stacey, here is another one of my favorite recipes using Cotija cheese… like you, I have a lot of Cotija cheese do use up after making my Mexican street corn salad. Are usually end up making so much salad because I’m just that way I make a lot of leftovers so it’s more like for a crowd. My dad loves the recipe so I make it a lot. Mexican beef bowl with Cotija cheese and carrots 10 oz ground beef 1/2 c Jasmine rice or 2 c cauliflower rice 8 oz grape tomatoes 1 lime 1 oz pickled jalapeños 6 oz carrots 2 tbsp Kotija cheese 2 tbsp Mayo 1 tbsp Mexican spice blend (cumin, chili powder, paprika, garlic powder, oregano) With 1/4 spice blend season and roast the carrots Brown the ground beef and season with remaining spice blend Cook the rice Make the salsa with tomatoes lime juice and jalapeños Make the lime mayonnaise with remaining half of lime Stack in your bowl rice beef salsa mayo cheese

Now I will have Whip It, Whip it Good by Devo in my head all day, LOL!! I love salmon too but Tim is not a fan, so it is all just for me (yummy!). You would definitely need at least 2 packages of that thin shaved beef from Kroger, as it's not a lot of meat (but plenty for the two of us). I doubt it would feed a hungry young man! I did make a birthday cake on my birthday, some for us and the rest to share with neighbors (a neighbor down the street has a birthday just two days after mine). Happy Birthday Stacy! I always laugh when I see people that only cook 1 ear of corn for each person. In my family, we eat our weight in corn on the cob. Growing up my mom always cooked about 20 to 24 ears at a time for 5 people and in my house I did the same for the 5 of us. We easily eat 4-5 ears a piece regardless of what else we have to eat with it.

Tim would likely want to be adopted into your family, LOL! He's a huge corn loving guy and would eat it at every meal, but I have always heard that it is one of the least nutritious veggies, mostly starch, so I try not to cook it as often as I would normally (we both love corn!). I don't think I have ever eaten more than a half cob or one cob at most, so that is really interesting to me, thanks so much for sharing!!! @@LetsCookYall We grow corn in our garden each year. Between my mom, us , my 3 children and others in the community that get some, we grow a huge amount. When my grandparents were still alive he had an entire garden of just corn. My husband plants 3 different types along with a large quantity of green beans, cucumbers, onions, squash, zucchini, tomatoes, and a large variety of hot peppers. He also has a separate garden for potatoes and sweet potatoes. We just finished harvesting the turnip salad that he grew. It’s a lot of work but we definitely reap the reward all year as well as we’re able to share with family and friends. Once a farmer always a farmer even if you work 48 hours a week at another job. I’m sure that we’ll continue doing this until we are no longer able to and then I’m sure that one of our children will start.
@Lisa Francis - oh, that's wonderful Lisa!! Tim grew up on a farm, but I'm a city girl through and through and to me, everything comes from the grocery store or in a styrofoam pack, LOL!! Fresh grown veggies are the best, and even though I know it's a ton of work, I know you are all so happy to have it and be able to put up some for later as well as feed your own family and share with others. What a wonderful blessing you must be to so many people, that's awesome! Enjoy that corn, I'm sure it's much better than most I've had (though the corn we showed was from a friend's garden this summer, that we froze to enjoy through the rest of the season, and it is SO good!).
