Truffle Tuna Salad Sandwich
Ingredients:
Tuna
Truffle oil
Scallions
Carrots
Celery
Mayonnaise
Micro Kale
S&P
Drain tuna and mix all ingredients into a big bowl. Scoop a good amount into some toasted bread, butter if you’d prefer richer flavor. Add a handful of micro kale or any greens you’d like (except lettuce, it’ll dilute the truffle flavor IMO).
Wah’s Rainbow Rice bowl
Ingredients:
Beyond Meat Grounds (or any protein)
Taco seasoning
Green & red bell pepper
Onion
Avocado
Spring mix
---
Rice
Scallions
Ground cumin
Ground turmeric
Lime
---
Garnish with:
Chili pepper flakes
Cilantro
Fried garlic
Micro herbs
Make rice by heating a pot on medium-high with oil, cook scallion for 30 seconds and add a good amount of ground cumin and turmeric. Add rice, salt and mix well and toast for about 3 minutes making sure to stir occasionally. Turn the heat up to high and add enough water to cover 1/2 inch above rice. Once it boils, simmer for 20 minutes or until ready.
While rice cooks, cook your choice of protein. If you use whole chunks of meat then season with taco seasoning prior to cooking. If using ground meat then season after it has cooked. Set protein aside.
In the same pan on medium-high heat, add a tiny bit of oil and char onion and bell peppers. Try not to stir too often so they can char, but stir occasionally so it doesn’t burn. Season if you’d like, I didn’t since there’ll be enough flavor from meat and rice.
Fluff the rice and lay it on a bowl with your choice of greens, meat, and charred vegetables in sections for presentation. Add avocado slices on top and a good squeeze of lime. Garnish with chili pepper flakes, cilantro, fried garlic, and micro greens.
