What to do when your lettuce is ‘bolting’ 

Thank you that is cool. I just picked a bunch out of my garden that was starting to bolt but still had small shoots starting. I was a bit bummed because yes the lettuce was bitter. I decided to wash and process it to store in the fridge anyway. I didn't really know what was the best method. so I did some resurch u tube style. Several of the ladies showed how they would soak the lettuce in cold water first and then moved the lettuce to another water dish to wash and soak with vinegar (mainly for cleaning and killing bacteria). I really liked that idea and tried it. My lettuce crisped up and the bitterness went away. I was thrilled that I didn't waste all the lettuce I grew but really was wondering what I did that got rid of the bitterness. Thank you for explaining.

My mum was Dutch. We could never get whitloff to make ondavie so mum used lettuce. (The older green leaves for free from the groccer even) Boil the lettuce, then drain, add nutmeg, thicken it with cornflour. The bitterer the better. Bloody beautiful. I still eat it, I call it 'Poke salad' after the Elvis song. Yea...we were poor.

I just chop it up and toss it in smoothie. Tastes fine
