I cooked up 3 chicken carcasses yesterday that were taking up room in my freezer. Today those carcasses are 11 pints of beautiful broth right out of my canner. I have no doubt there's some ham languishing in the freezer that will be tomorrow night's supper with potatoes. I'd better get digging thru the freezer again! God bless, dearheart.

reminds me of something The Barefoot Contessa said years ago during one of her shows - she’d rather have a freezer full of homemade broth / chicken carcasses than all the pearls or diamonds that Geoffrey (her wonderful husband) might give her 🤣😂 she was right 25 yrs ago and she’s more right now - thnx for sharing this information with folks - it’s not new for a farmers granddaughter but it might be new to many urban folks 😃🤗

Recently I made cabbage with potatoes onions carrots and chicken broth. I took the leftovers and put it in the blender, and pint size containers in the freezer. It is now a most delicious soup, great for a cold day's lunch.

Honestly even if meat is freezer burned, you can put it in spaghetti sauce or chili and you’d never know.

Hi Tessie you have just brought back a wonderful memory with your bacon, in our house just after WWII every thing was tested by dads nose if he said it was good we ate it and long slow cooking back then meant it in a very low over or on the back ring of the cooker, Sunday was my favourite day, after we came home from church dad would send mum in the living room to read the paper, it was her day off. So we got dinner ready and then mum came back to join us. My sister and I used to clear the dishes and put all the cutlery into a jug of water (no working on the Lord's day) then tea time dad made toast in front of the fire and spread it with the the bowl of dripping on the hearth, then bath and bed. My favourite time was when we spent our time together drawing and colouring, learning to knit and all the old time things, God Bless you my dear sweet Tessie, love as always x

@@Marygalvin49 Dad used to drain the fat from the beef we had at lunch time ( in those days beef was much cheaper than chicken. So chicken had to wait until Christmas) including the sediment from the pan and put it straight in the larder on the stone shelf where by teatime it was ready to use, so dad sat with his toasting fork making toast for us all, mum always tipped it upside down to retrieve the sediment and the jelly.

Believe it or not, I have eaten hamburger meat that was brown on the outside but still red in the middle and smelled just fine. My daughter on the other hand has thrown that type of meat away. And mind you, she didn’t grow up hungry but money was tight.

I made a sausage stew last week with 4 Italian sausages, 2 large cooking carrots, 1 cooking onion, 3 potatoes, 1/4 of a cabbage , a half carton of chicken broth and a cornstarch slurry to thicken it up. It's a fairly cheap meal to make. Will feed 4.

Green beans & new potatoes is one of my favorites. My family always cooked it with salt pork though, that's the southern way, but ham or bacon is good too!

Great job Tessie. I had only 20 dollars to feed my son and I until Friday with the stuff we already have. So today for 20 I got a pack of hot dogs and a pack of bologna and a can of hot dog chili plus a $9.00 turkey tenderloin marked down to $3,99. I also got a loaf of bread and two bags of potato chips. This plus stuff we have will feed us lunch and dinner until Friday. I did good (lol). Times are hard and getting harder. Your meal looks delicious!

I took 4 sausages that I could have eaten in two days with my husband, cut them in slices, threw them in my Crock-Pot with the last of my carrots, spinach, some leftover broccoli, and an onion, with six cups of broth. Now I have soup for about 8 meals. Win!

In a SHTF event and the electric has stopped you should use your refrigerated food first and then go to your freezer food. I put a couple of gallons of water in mine to freeze and extend my freezer foods. I have lost lights for over 2 weeks with a hurricane.

Tessie we make “half the garden soup” before we shop. It goes like this, check the crispers and use all, plus the soaked beans at least 24hrs of Changing the water and anything we find in garden. Then any herbs we have and stock. Yum , and I serve it with naan bread or sourdough bread. Bless all you loved ones.🙏🙏

Love this video on my other channel I show the same thing I’m using up food that we had in our prepper pantry for six months! I’m going to be able to pull out a seventh month of eating our preps and only going to the grocery store to do fill in situation! This is save me over $3000 in six months now. And I like the fact that you say that you’re not gonna fear ever being out of food because the real reality is foods not gonna go anywhere we’re always gonna have food around regardless of what others think. @@Myfavorites877 I have to say, reading all these comments that ppl are finding ways to conserve but they are still eating well. I'm a senior, on SS, and I've learned that there are few things that require refrigeration, so I use my fridge for keeping a few things and a sealed plastic box for keeping other things. I buy a few cold or frozen things that will keep fine for a day or two (more in winter) and eat those up first, then eat the things that can't spoil. I've never been a meat eater wh is lucky bc that's not doable in my budget, but i always buy a pint of my favorite ice cream (until its too cold to eat it while I sit outside the store to wait for my transit) or yreat myself to some tortilla chips to feel "normal." When I shop, i have to use senior trans (no buses here, the state prides itself on providing free city bus passes to seniors😂😂) and it costs me $5 to get across the highway. I have walked in an emergency, it's relatively safe until I get across the highway (crosswalk) then there is no shoulder or sidewalk, just driveways directly off the highway. Face it. Ppl in cars aren't expecting an old lady on a walker to be walking there as they fly off the highway. The point is, I'm in a town w/o services (trapped by the pandemic) and I'm not starving (freezing but not starving). So don't panic. It's much easier moving downward a step at a time than finding your previously well-healed self suddenly facing an empty cupboard. We've had lots of time to prepare and though we may not have ppl to help, or lots of room to store food, most of us can sure afford to skinny up. We're ok so far and way better off than we will be if our govts enemies start dropping nuclear bombs on our heads. So cheer up. And if you are able, share some depression era food w those who have nothing and we'll all get through this rough time.❤☮🙋

You did awesome creating that meal! You are so clever. It's always so fun to watch how somebody puts a meal together. My mom and I always talk about that word so fun somebody can take the same ingredients and two different people can make different meals out of them that's really fun to watch. Have you ever thought about doing a challenge list out a few ingredients and see what people come up with. Like if you make something with so many ingredients challenge people on your video to make a meal using those same ingredients and we can all brainstorm. It'd be really fun to see what people do

Your supper looked delicious Tessie. When my freezer quit, I put everything in the new freezer and refroze it. We had ground pork yesterday that I did that to and it was fine. The USDA says if it thaws slowly then it can be refrozen.

We having a really hard month I've had to buy alot of things that broke and also buy antibiotics twice this week for my dad he's had a UTI and been a nightmare but me going on a near starvation dirt for close to a year then starting to rotate cans out before they go out of date will get me through

That looks delicious, Tessie! And even though I am not a gambling woman, I would bet the contents of my freezer (caution advised) that *none* of you got sick from eating that ham/green bean/potato meal. 😀 In our grandmother's day the process you explained of looking, sniffing and checking the date would have been a part of almost any homemaker's daily routine. But now it seems that it's more often "all about the *rules*!" (Even when strict adherence to "The Rules" doesn't even make sense.) I read a while ago about a Mom who sent a pan of brownies to her kindergarten son's class to celebrate his birthday. To be considerate, she even included a *plastic* (yes, mind you, plastic) knife, so that the teacher would easily be able to cut up the brownies for the kids. Well, you guessed it. The little boy was disciplined for "bringing a weapon to school!!!" There was even talk about suspending him! I have to ask: Does that even make sense??? I think so many of us have been so frightened by people like TSA agents at airports and other "security" personnel in public buildings who let a little bit of authority go right to their heads, that we have started living in fear of being yelled at or of someone saying that they're going to report us to some investigative agency (like Child/Adult Protective Services). I'm not saying that we should have zero rules of course, or that all security personnel are unreasonable, but having a sense of balance, the way our grandparents did (and the way you demonstrated here) lets us function as adults in our society. And right now, we *really* need that. Thanks once again for being the voice of reason, Tessie. Even though there must be times when you feel like that "voice is crying in the wilderness," hoping that people are hearing what you're trying to say! 🙂

Cleaned out my freezer a few weeks ago and a few of the meats did have freezer burn. Meats packaged with a lot of air space don't last as long in the freezer. I think in the future I'll repackage those. Now everything has been checked and organized. Your pantry looks amazing - I'm definitely down a lot of food in my working pantry and freezer because I've been getting some home repairs done and just buying minimal groceries. Glad I had the extra and it was good to use up some of the items that were frozen from last year. But now it's making me nervous and it'll be 3 more weeks before I can start to restock. Your stew looked really good - I'll have to try that combination. Thanks!

My mom just ate her version of this the other day. She used a quart size jar of potatoes, a pint of green beans and a package of smoked sausage. I do not think that she used any broth and she cooked it all in the microwave. She said that was really easy to make because all she had to do was dump the jars in and open the package of sausage.

You can eat a year old ham from a year ago in the freezer check the coloring and the smell

I try to can up my freezer foods. I love being able to cook quick meals. I also do not grocery shop that much.

Hi we had all most the same thing last night. Used kielbasa did brown that along with some chopped onions. No broths just a pat of butter and some water and black pepper. Simmered it on the stove til potatoes were tender. Next time making a pan of cornbread to go with it. We love that and do love ham in it too.

Had a terrible year with our spring garden. Weather so hot and dry. I got a few dozen cans of tomatoes is all. Fall crop of beans coming in and canned up. Hoping to do better next year on the garden.

With the cooler weather, I just made some corn chowder, it was so delicious and easy and you get a large tasty pot of soup and I just used one small ham steak to flavor it.

Tessie, most people would never believe this but I cleaned out my chest freezer and found 2 steaks that were vacuumed sealed and over the date. They looked perfectly fine so I decided to cook them and if nothing else try them on dogs. I tasted them and Lo and behold they were very tender and tasted fine. We had them for dinner that night. How long were they at the bottom of the freezer. 8 Years. Believe it or not.
