The Best way is to practice using all kinds of oils/ ghee in your diet , Making different dishes in a different oil each time changes the taste and also provides the necessary nutrition, and you're not depending on one single cooking medium. So make certain veggies in groundnut oil, some in mustard, ghee chapatis and Dals etc , salads in olive oil , parathas in Til oil ...That way you can enjoy a different taste and variety and nutritional benefits... Important point you mentioned is the Region from where one hails must stick to their own traditional cooking medium...But do know that Cold pressed oils in india are Expelled with a lot of Wax , gums and fatty acids and should therefore be used with caution and control, That is the reason they cannot be stored for long. I am a Qualified Chemical engineer specialist in Fats n oils and have put up over 600 oil extraction and plants and Refineries all over India. Best regards.

This is good stuff and a great video - I was once shocked when an Indian mate of mine told me that the ‘traditional’ oil he used to cook was peanut (groundnut) oil. I had a good laugh - peanuts originate from the Americas and aren’t traditional in India, plus the oil shouldn’t be used to cook, I’d say. Wheat flour, peanuts, and peanut oil became popular in India as cheap imports from the USA back in the 1950s-60s. Back then ₹1=$2. I use virgin coconut oil, ghee, cold-pressed mustard oil, virgin olive oil and cold-pressed rice bran oil in my cooking. Please make more videos like this - I hope all my Indian brethren start eating good stuff. Greetings from Oz 🇦🇺
@SatyaSanathani

Wheat and peanut have been grown in India since a very long time. They are not imports from the west. On the contrary, bloody english people from west looted India, Africa, and many asian countries of all the wealth and made themselves rich.
@KrisVal-tu5li
@KrisVal-tu5li 10 месяцев назад
Peanut oil is used almost daily by about 50% of Indian population. That is the only oil we knew growing up in India. My family has several members that lived to late 90s or 80s depending on village or city lifestyle. Mostly vegetarian and occasional non-veg. Lifestyle has more to do with health than these oils to be honest. A sedentary lifestyle in cities with other habits are more harmful than foods we eat. Peanut oil seems to be the best option. Of course diet should include all kinds of food that do not require preparation with oils. I personally use a mix of ghee, coconut and peanut oils. We should refrain from bold arguments for or against and stress healthy lifestyle along with the food choices. Active lifestyle will offset most of these small deleterious effects of foods.

Very well said. I love the Word Time Tested. Refined cooking oils may lack of phytonutrients but they are mostly odorless and a few like Palm Oil is very stable for frying. Palm Oil very stable generally at repeated frying. Olive oils are not good at frying yet when we follow any European cooking program we can see very clearly that they only emphasize very little about deep frying. But the word Olive Oil will be repeated many many times while the cooking as it is the Main Ingredient and the Magic of the recipe. Please don't fall for it. We need the amount of oils base on life styles , where we live , cheapest best oils which locally produced and the cooking methods.

My choice will be Pure Ghee made in traditional way is best for health and quick energy. This is followed by Raw Oils. Best if cold pressed-but they are hazy, low shelf life and sold at very high price as the makers are not able to work out economics of De-oiled cake. Raw oils have all natural nutrients, proteins and Anti-oxidants intact. You can always buy oil in small lots. One catch is Raw or cold pressed oils have their natural odour and taste which can interfere in the final cooked product taste and flavour. Refined Oils are safe to use as they are heat treated under vacuum. But all natural nutrients are sucked out. So if one is looking at bland taste and odour in the final recipe, then refined oil is a better option. Best way is to keep changing oil and use them in tandem as every oil will have its unique benefit to our health. I can answer any questions as I am from Oil Technology background.

Must say an excellent video amongst various paid video propagating Olive oils, market known refined oils.. Just that Cold pressed Mustard oil range anywhere between 260 - 350 or even higher.. As making of cold-pressed are costlier 3 Kg of mustard seeds gives one litre of Mustard Oil. Again brilliant information and please make video of Rice Bran Oil which a as per my research again is not good and so is Mineral oil.

Thank you for the great content of the video. I’m new to using cold pressed mustard oil for cooking; I’ve noticed that when I fry the chopped onion in the cold pressed mustard oil, it becomes kind of foamy which makes it hard to see if the onion is getting burnt or not. And the fried onion doesn’t become crispy for Birishta. I would appreciate any tips that you can share.

Very true, use traditional oils which are time tested. I used olive oil daily (3 tbsp) for almost a year then the Dr told me I got fatty liver on annual checkup. I don't know what had caused this but I suspect olive oil since that is the only change in my diet. I read in many articles it's very good for health but it did no good for me I suspect.
