In this video, we explore the taste of ten different sugars, and decide which sugars are sweet, and which ones taste worse than Grimace’s feet after a long day at McDonalds.

General Procedures
General Procedure 1. Preparation of Standard Citric Acid Solution
Citric acid (2.007 g, 10.4 mmol) was placed in a large beaker (500 mL) and pre-boiled, room-temperature tap water (~500 mL) was added. The solution was mechanically stirred (using a polystyrene spoon) until homogeneous. The resulting citric acid solution was covered and stored at room temperature prior to its use.
General Procedure 2. Preparation of Aqueous ‘Citric Acid-ade’
The sugar (e.g. lactose) was added in one portion to a small polystyrene vessel (60 mL). This was then suspended in the standard citric acid solution (~25 mL) with the aid of mechanical stirring from a translucent mouth-pipette (straw; material not determined). The resulting suspension or solution was mouth-pipetted in several small portions for the large mammal assay.
Methods and Materials
All chemicals used in this video were food grade. The chemicals were obtained from Amazon Canada (in the cases of lactose, glucose, psicose/allulose, and ribose), Ebay (in the case of maltose and xylose), Bulk Barn (citric acid), Bulk Supplements (in the case of trehalose, mannose, and fructose) and Save On Foods (sucrose). The itemized prices that I paid do not include the cost of shipping or taxes. The combined cost of shipping was $56.00 CDN + $48.01 USD.
Warning consuming large amounts of sugars that your body isn’t accustomed to may result in gastric discomfort for you, and nausea for people in your proximity. If you are introducing new sugars into your diet, try eating a small amount before introducing larger amounts into your diet. Take up any concerns with a medical doctor, which I am not.

@@stephenjames3377 sugars have the formulae Cn(H2O)n where n is any number. C2H6O (ethanol) doesn’t follow that rule so it isn’t a sugar, its an alcohol/alkanol

A few weeks ago a certain German chemistry RU-vidr presented me with the craziest "sugar" I've ever seen: neotame (actually an artificial sweetener). It's supposedly thousands of times sweeter than sucrose. He shook the bottle and let me smell the air around it. Within seconds I started feeling sweetness on my tongue - this compound is so sweet that the minute amount of dust coming out of the package is enough to trigger our sweetness receptors! That's absolutely insane. I also tasted a tiny grain (almost invisible to the naked eye) and could still feel the sweetness in my mouth an hour(!) later.

I was at a seminar about sweeteners used in the food industry. At the end, the speaker passed around bits of a paste containing an antagonist of the sugar receptors on the tong. The paste didn't taste much. They then provided a buffet with all kinds of sweets... That was hilarious. Cookies: tastes like dry flour, chocolate: bitter cardboard, honey: salty paste. I don't remember the name unfortunately, but if you ever find it, prepare all the sweets you can, take the inhibitor and be prepared to put everything in F tier.

I actually tasted galactose during a biology lab, where I rated the taste of about 8 different sugars, and 4 sugar alternatives. If I can recall correctly, it tasted very sweet, and almost sweeter than sucrose, the texture was powdery and nearly chalky.

Your mention of the static messing up the measured chemicals brought up a memory. The balance kept being off and no matter what we could not get a stable calibration. Then we dug out the manual and found it had a "radioisotope based ionization static neutralizer cartridge" made of polonium 210 that should be replaced every year. The sources were from amstat industries and were surprisingly inexpensive considering the cost of the balance. 🤓😁

Lactose is frequently used in homebrewing to add body without affecting flavor much. A collab with a homebrewing channel could be interesting. Maybe do a basic brewing session and as the steps are described we can get a background on the chemistry going on.

I'm actually really surprised by the low placement of maltose. Maltose syrup (stiff, chewy stuff) used to be eaten straight or sandwiched between saltine crackers in Hong Kong around the 1950s, just as a sweet snack. I even had a small tub of the stuff a couple years ago. I'm wondering whether the "pure maltose syrup" sold in those tubs is really just maltose, or maybe the maltose in the video is contaminated with paper/cardboard-tasting stuff.

There is lactose free milk that never had lactose in it (because the organism that made it is a GMO). For example Perfect Day's milk.

@@theRPGmaster Nah. Well, not with Perfect Day at least. Perfect Day uses fungus or something to make milk using cow genes IIRC. Which is good because cows are a notorious source of greenhouse gasses. Maybe other groups are modding cows. I'm guessing you'd be interested in spider goats. Which are goats that have been modded to have spider silk proteins in their milk.

I'm 31 and I still drink cow's milk, I've been drinking it my whole life, no issues at all. Same with my dad, he's 58 and has also been drinking milk his whole life with no issues. Milk is one of my favorite beverages.

Respect to Theresa for doing this with you. I'm surprised at the price of these sugars. I had to check my local eshop and glucose is $6 a kg and fructose is $4 a kg. The sweetest thing I have ever tried is not exactly sugar, but it can be classified as a sweetener and is called Steviol, but it has a strong aftertaste which is not for everyone and there are some doubts about its safety. What I can also recommend to try is a polysaccharide called #Inulin. It has a decent mild taste, may be B-Tier in my experience with others on the list, and I think you may like its structure.

I used to talk about sciency stuff the same way you did in the video but no one understood me so I just talked to myself about those things in my head and reserved a separate kind of speech for everyone else that they could understand. It's nice to listen to someone who knows my not so secret language. Everyone else around me would have no clue what is coming out of your mouth besides me.

As far as alternative sweetners go, Splenda is probably the least worst. Thee worst to me is probably glycorrhyzin...I think that's how is spelled...from licorice. Ugh, nasty, man! And you are a smart man, Teresa is indeed the sweetest one in the room! Whenever my wife is in the room, she is always the sweetest! 😊 Awesome dialogue and as always, S tier material! ❤

I thought allulose was sweeter than sucrose, and tasted quite good. I got a bottle of a syrup made from it from Japan for sweetening beverages etc.

when i was in 6th grade i had to get saccharine and aspartame for a school experiment, i tasted them both and i distinctly remember aspartame being so sweet it's painful

Adding to possible side effects: a weird side-effect I noticed with one artificial sweetener (sucralose) or something it was bundled with was simply not being able to sleep properly. Wonder if any of the other sugars have anything similar.

I blind tasted a bunch of exotic sugars, while working on their use for powdered alcohol and sports drinks. I never really looked at which was which, but my main take away was that a lot of sugars are pretty nasty, or just off-puttingly off the mark.

There’s a Spanish soft beverage, the bottles are small, it’s non alcoholic, it has the right taste, lightening up on the sweetness , a little yeast added and given a little time to ferment , would make a nice light beer, the drink has a nice combination of the barley and the hops . Being from the north. I would use maple sap as the liquid and maple syrup to cheat the sweetness

FYI lactose intolerance or tolerance doesn't 100% correlate with lactase persistence. Even those who don't make their own lactase can often tolerate fairly significant doses of lactose depending on the microbiome and whether they've been sensitized to the products of bacterial digestion of lactase.

Not a sugar per-se, but I tasted erythritol many times, and it tastes... interesting. It's like a less-sweet sucrose with a funny cooling effect due to its endothermic water dissolution.

I definitely need to try some ribose...of course with it being the core of my science I find it only right. So we have ribose and cysteine both making F-tier compounds. I was actually trying to perform my first organic synthesis research on synthesizing D-ribose-L-cysteine or (4R)-2-[(1R,2R,3R)-1,2,3,4-tetrahydroxybutyl]-1,3-thiazolidine-4-carboxylic acid. It did not work well for me at the time. I wonder what this tastes like in its pure form. I suspect it may be better than the separate materials, but it must be determined.

so i can’t have most sugars (not diabetes), and of the ones in the video i’ve had, lactose and allulose/psicose are the two i can have in quantities large enough for it to not really be an issue. it’s nice to see it rank well. for other sweeteners, erythritol is also good, same with stevia, tho stevia leaves are super good, someday i wanna get stevia leaves and make a tea from them. tempted to look thru the captions for the one that lowers your blood sugar level and get some to try, would be pretty cool if i can have another sugar.

It's amazing that human taste is so good at distinguishing similar molecules. It would be interesting to see if anyone has done a blind taste test between glucose, sucrose, and fructose to see if they can tell the difference. I'd bet at least some people can. I have observed yellow jacket wasps avoiding diet soda in favor of sugared soda. but again not in a real science experiment. This would be an unpleasant experiment because you'd have to intentionally deal with yellow jackets. Could the disaccharides be broken down by the citric acid? Probably not in any meaningful way in this experiment, it would take more heat, more time, and a stronger citric acid solution.

If anything, the only thing I was disappointed about was not seeing y'all have a finale where you add a bit of each one into the rest of the citric acid(ade), and give that a taste, because I'm curious if that would make something all round ultimately sweet, or just have one or 2 of the sugars overpower the rest.
