Whiskey Sour Cocktail - Bourbon Vs. Irish Whiskey - Cocktails After Dark
This is from 'The Fine Art Of Mixing Drinks' published in 1948 by David A. Embury.
WHISKY SOUR
I part Sugar Syrup
2 parts Lemon Juice
8 parts Rye or bourbon
Two or three dashes of Angostura to each drink constitute a pleasing addition to this drink. Lime juice may be used in place of lemon, but, to most tastes, lemon combines more pleasingly with whisky than does lime. Scotch or Irish may be used in place of rye or bourbon.
but the smoky taste of Scotch does not
combine pleasingly with citrus juices.
Whisky Sour without the sugar is sometimes called a PALMER.

I got an antique recipe for a whisky sour, from a relative when I shared this video with them. Don’t know how far back it goes but it’s probably pre-1960. Equal parts whiskey, beer, and frozen lemonade (undiluted). Garnish with a cherry.

I like to use both lemon and lime for sours. I find that combing the two makes for a slightly more interesting drink. Also, I'm in the US and haven't seen the Weller Antique 107 on a shelf for years! Funny how that works. 😄

It's hard to nail down - In my 1892 copy of 'The Flowing Bowl', the whiskey sour doesn't contain egg (but it does contain seltzer). However the Brandy Sour and the Delicious Apple Jack Sour, do have an egg white. So I have to imagine that some Whiskey Sours by that point had egg? In that same 1892 book there are several called '___x___ Whiskey Sour' that include cream. By 1930 I see the 'Egg Sour' in the Savoy Cocktail book, but the Whiskey Sour is eggless. For the most part when there is a sour with egg - it's called '___x___ Whiskey Sour' or '___x___ Sour'. The straight up 'Whiskey Sour' with egg seems to be a post 1950s thing.

The 84 proof is naturally going to be smoother. I would try it again with 1 and 1/2 ounces of Weller. The high alcohol content can overpower the other ingredients. To my taste bourbon is smoother if abv is the same. Thanks for the tastings that allow us to learn while staying sober!

The Irish Whisky being “smoother” may be a result of the Weller’s being 56% ABV (or thereabouts if I recall correctly). The Antique 107 is a fiery bourbon!

Wow, I’d have thought the lime vs. lemon swap would have made more of a difference. I certainly don’t find them indifferently interchangeable for margaritas.

I don't think they are that similar, but it's the whiskey that drives this cocktail, maybe they were disguising the differences in this case a bit

My husband and I love watching this series and trying to guess how many cocktails you shot in one session and how far into said session you are. There always seems to be a slow and subtle change from very scientific way of going about it to a more relaxed and by the seat of your pants have at it attitude.

Quite some time ago, I've moved mostly to an overproof Japanese mixed whisky called "Riku" (made by Kirin). Not sure if it's available outside of Japan yet as it's only been widely available inside Japan for a year or so. I've been surprised at how often I prefer it over bourbon even in cocktails that specifically call for bourbon. I think it's specifically made for mixing, though. I seem to have been in the test market when it was first introduced and on those bottles it used to have a warning on the label something to the effect "Warning: Not to be used only for making highballs" :-) They removed that from the label when they launched country wide, though, which made me sad. If you ever run across it, I recommend picking up a bottle. It's quite cheap here (the equivalent of $10 CDN for 500 ml).

I find that the lemon is softer, it just blends into theis cocktail a little easier. But they are all great variations.

try 1oz bullet bourbon, 1oz maple syrup, 1oz water, 1oz lemon juice put into shaker with 1 egg white and shake for 30 second straight. strain if you wish... master piece I made circa 2013

Over the last couple of years I have also strated really liking the Irish whiskeys. Having recently been in Ireland at the Whiskey museum they say that Irish whiskey is currently #2 in market share in north America but predicts buy end of 2024 in to 2025 they will be #1.

The Antique 107 is a unicorn bottle in my area. It is an allocated bourbon, and impossible to find, and insanely expensive when you do. At least where I live near Indianapolis.

I like whiskey sours, it's a go to favorite of mine. Some recipes add egg whites which I don't really care for. I'll have to try it with the bitters.

I personally agree with Mr Embury that lemon pairs better with dark spirits, but I have to admit it's a minor difference in the end.

IMHO - lemon is better for whiskey cocktails and lime is better for rum drinks. Your right, in a pinch you can substitute in either case but if I have my choice . . . that's the way I roll.

Amazing how much color the 2 dashes of Angostura added. Since I recently bought a bottle of Angostura for different reasons, I think I might have to give this one a try some time! I know it is a classic, but I have never had one 😊

Simple syrup? Nope use honey, 1. It supports honey producers. 2 it is all natural. 3. It tastes better! Mix booze and tablespoon of honey stir, then add cold ingredients!

Oast House is a good brewery, Andrew Peller has a great winery, as does Two Sisters, SouthBrook, Henry of Pelham. But so many of the wineries around there are good. I haven't eaten down there since before Covid, but Treadwell usd to be good.

You can barely find Weller anymore, and when you do, it's been marked up way beyond its value, IMO. It is not the bottle I would be doing mixed drinks with.

It's available here at the Gov't liquor stores about half the time, and the price is pretty reasonable. About average for a bottle.

A proper whiskey sour has egg white. You can judge a good bartender if they ask you what type whiskey and if you want egg white or not.

If when you say "A proper whiskey sour has egg white" you mean that's the way you like it; I would agree. That's the way you like it. But if you mean historically 'Whiskey Sours' have to contain, or did contain egg white; I would disagree. This is by no means an exhaustive search through my collection of historical cocktail books, but. In my 1887 copy of Jerry Thomas' book the Whiskey Sour is eggless, there is an 'Egg Sour' but it uses brandy. In my 1892 copy of 'The Flowing Bowl', the whiskey sour doesn't contain egg (but it does contain seltzer). However the Brandy Sour and the Delicious Apple Jack Sour, do have an egg white. Maybe some Whiskey Sours by that point had egg? In that same 1892 book there are several called '__x__ Whiskey Sour' that include cream. By 1930 I see the 'Egg Sour' in the Savoy Cocktail book (it uses brandy), but the Whiskey Sour is eggless. For the most part when there is a sour with egg - it's called something else '__x__ Whiskey Sour' or '__x__ Sour'. The straight up 'Whiskey Sour' with egg seems to be a post 1950s thing, and then only in a small number of books. Yet the myth that a true / traditional Whiskey Sour must have egg lives on.
