Whiskey Stones or Steel in Mead - Which Is Colder.. Longer? Today we're testing whiskey stones vs whiskey steel cubes. It's all about keeping your mead or wine cold here folks. I drink out of a steel tumbler every day and never had a metallic taste. Also, I noticed that our steel cooling cubes work better than the stone ones. This just further confirms my own observations. 🙂

I am not surprised steel won. It has a significantly higher coefficient of thermal conductivity then granite. Meaning the heat energy can transfer into the steel cube quicker then the granite. The advantage of the granite is that it has a higher specific heat capacit meaning it can absorb more thermal energy for the same volume before heating up but it does so at such a slow rate. It is almost an insulator.

normally yes but these stainless steel icecubes arenot solid steel, they are hollow and filled with an alcohol blend that helps it actually get colder than actual ice so it lasts a lot longer than the granite stones

Interesting! Which of the two are heavier? (Density just being 'more stuff in the same space). I think I've heard before that electrical conductivity and heat conductivity are closely related, so more dense metal cubes doing the temperature thing faster makes sense.

I use a whiskey glass that is liquid filled that I keep in the freezer. Does the trick, gets my beverage super cold. I have more than 1 so when I go to refill, just swap out for a fresh 1 in the freezer.

I've used the steel cubes in my whiskey for years. They're awesome. It's a personal preference really. The ones I use are called "nICE Cubes". Got em from Brookstone one year for Christmas.

Another test idea. Red wines supposedly improve taste after being allowed to breath/aerate for a little while. A quicker method (allegedly) is to run it through a blender for a few seconds. Would a similar practice improve your mead experience?

@@julietardos5044 Yeah, all pretty much the same action but the electric blender varieties are supposed to help put a lot of air through the liquid very quickly for convenience.

subjective drinking is my favorite. By the way, I'm currently aging 5 Gal of Capsicumel (Mango Habanero [frozen mangos] OG:1.141 FG Est: 1.030) on Brewer's Best agave soaked oak chips. I'm anxiously awaiting the outcome. I'm also trying to come up with a good name. Do you like "Murder Hornet" or "That's a Spicy Mead Bowl!"

Thank you. Your video was on point! I just found my bio dad after 40 years. This will be our first Father's Day as father and daughter. We can not be together. Excellent timing! My SO’s son is very much i to mixing cocktails and he has four steel cooling cubes. Obviously that isn’t enough when he’s mixing drinks for more than one or two people so I was considering getting him more the next time I’m looking for a present for him. When you started using the whiskey stones I was considering them as they do give off a luxury vibe. Now I’m certainly going to go for the steel ones.

Steel is definitely more dense than stone. Granite is about 150lbs per cubic foot where Steel is just under 500lbs cubic foot. Steel stays colder much longer. Science.

The metal cubes have a larger surface area and displace more liquid, and allow for quicker temperature equilibrium

Stainless Stell is not supposed to taste metallic anyway considering that we used it in tumblers, plates, drinking cup, spoons, fork, knives, etc.. no surprise there

I use ice because it doesn't change the flavor and I can drink a drink fast enough the ice doesn't tend to melt much.

So if my science is right steel will cool it quicker as it has a higher thermal conductivity, but it takes less energy to heat the steel. In theory the stone should get colder but take significantly longer... that's the theory but I am not sure if that would work out due to heat from the room being transfused to the mead. If you are anything like me I would stick to steel as mead does not last long enough for stone to have a chance haha

The stones are less likely to cause water to freeze out of the beverage for that same reason. I haven’t had that problem with the steel ones, but it’s a hypothetical disadvantage of the steel ones if they get cold enough.

I figure the problem Brian noted when the mead was warming up is that low thermal conductivity of the stones. The stone likely holds more thermal energy than the steel. But the low transfer rate of the stone means it will have a hard time fighting against room temperature when cooling the mead.

I keep a few steel whiskey chillers shaped like bullets. they have a gel core which helps to keep them colder longer.

I've been wondering about these since you first mentioned them in your videos. I like a good Whiskey or Scotch now and then, but prefer not to water it down with ice. Occasionally a touch of water at room temperature. Chilling a drink with stainless steel cubes sounds like it is an interesting experiment to try.

Mass (volume) is L^3 and surface is 6L^2 so larger means more mass to surface.

I imagine metal (because of its better thermal conductivity) will suck up more heat from its surroundings faster than most other materials

Neither the steel or the stone is colder than the other. The steel is more thermally conductive which means it removes temperature quicker. We don't actually feel the temperature of something, we feel the direction of radiation.

with this nice video I have a question (probably stupid) in the "world of wine" I was told that serving a good red wine that comes out of the refrigerator is really not optimal! and serve an unrefrigerated white wine (at room temperature) either! For meads and other drinks made from fermented honey? how should we serve them, to allow them to express all their flavors ??

“They” say a lot of things. I say serve it all however you enjoy it. Those rules are made by people iust like you and I. It’s even been shown many wine experts can’t tell a cheap wine from an expensive one, lol.

most steel ice cubes are also hollowed out and filled with an alcohol blend safe for consumption so it actually gets colder than a regular ice cube, just doesnt chill the drinks as fast

Before watching I will predict that stone holds temperature longer. The issue would be the amount of time to produce a stone cup. Then there is of course the weight factor! So let me watch and see I will comment to my post later

How heavy are those cubes? I'd hate to have them break some vintage glassware, or fall accidentally on a glass top table. I just keep a bottle of my homebrew mead and cider in the fridge, or use frozen berries.

Ok, so. Theoretically, a cube stuffed with a substance (water probably) that will state change would be the most efficient as far as BTU absorption. Steel conducts heat faster than stone, so a cube of steel filled with frozen water would keep a drink cold for awhile, whereas a cube of stone filled with ice would keep a drink cold longer, but not as cold. Only issue with the stone is making sure it doesn't shatter from expansion during freezing. That being said, the specific heat of most substances has been measured and can be searched. The heat conductivity similarly is a known quantity. Steel specific heat capacity in BTU/lbm F is .112, granite is .185. (For reference, water is 1.0) From this we can see that the capacity of granite to absorb heat is higher than steel, however, the thermal conductivity of steel is higher, so the question then becomes how good is your cup and how fast are you drinking it. Most glasses are ... well, glass, which is actually fairly insular, but are generally thin and won't hold heat well. Also if your drink lasts long enough for the granite to flex its muscle, it will be absorbing heat from all around. If you are sipping your drink slowly from an insulated cup, the granite might be superior. Sorry to nerd out about this topic, lol.

But the stones were actually warming up by the time we finished not still cooling…. Granted, the stones had a lot less mass than the steel but in this test the steel was by far better.

@@CitySteadingBrews Fair enough, the specific heat is based off mass, so that should certainly be factored into any conclusions. Essentially, the steel will cool the liquid much faster but overall cooling capacity of the stone is higher assuming equal mass. For the application given I think the steel is more fitting. If you are starting with cooled product, maybe the stone would be better at keeping it cooler longer? In any event, I merely wanted to point out that the heat capacity and conductivity is a known factor for pretty much all substances. That way if viewers want to look up less conventional options they can find that information.

This was a really interesting video. I think with the steel ones, people can sometimes get the metallic scent from them and as such the brain tricks them into thinking they can taste it too, It may also work with seeing the steel in there, the brain can make you think you are tasting it, even though there would be no taste from them. Humans are very visual animals tbh.

The volumetric heat capacity of granite is 2.17 J/cc K and steel is 3.76 J/cc K. Meaning that steel is better, per cube, than granite, by about 75%

Gotta say I’ve drank ales out of stainless steel steins and never noticed any off or metallic flavours. Additionally, I don’t like using the stones/steel cubes to cool down whiskeys. I’ve found that using ice really brings out the flavours in the whiskeys I’ve drank.

I would bet the metallic taste comes from things like stainless steel water bottles where it sits in there longer. I don’t imagine the cubes would be in there long enough to affect taste.

I got a metallic taste out of a drink stored in my latest stainless steel isothermal bottle in a very short time, so it had to be some residue or some surface property that's left after manufacturing but might also be specific only to the kind of steel that's used for long-term contact with food, i.e. 18/10 or whatever grade that is, which is not the same as what's used for cutlery and might not be the same as what the cubes are made of. But even if you have this problem it goes away pretty quickly after a simple rinse with baking soda solution - found this tip online and it totally worked, never had a metallic taste out of that bottle again.

I bought whiskey stones a few years ago. Used them only twice. To me, the stones imparted an unacceptable flavor, and didn’t chill my beverage well. It might be interesting, since you have both types, to do a taste directly of them both on the tongue, at ambient temperatures, so as not to have you stuck like the kid in The Christmas Story to the flag pole. I would be interested in your result.

Fun fact, granite has a certain percentage of radioactivity in form of radon, even a bit in countertops.

Interesting. Radon is the radioactive gas that can come from granite due to various levels of radioactive materials that can be found in granite. However, since the granite is not porous and exposed surfaces are treated with sealant, it is harder for the radon escape from the granite than from more porous stones such as sandstone. As there are too many variables to make a decree to what amount of Radon emissions might occur, the government agencies recommended having homes tested for Radon.

Is mead similar to whisk(e)y in that the flavor profiles can be modified (for better or worse) through small amounts of dilution? Or is mead not high enough in ABV to benefit in a similar manner?

I think mead and wine is more affected by dilution. IE, it's so low an ABV that you can drop the alcohol content quickly with just a few drops of water, where whiskey takes more to affect the changes. We started using ice balls for our tastings, and found they diluted the brews too quickly.

@@CitySteadingBrews From my experience, even very minute amounts of water (a drop or two), can greatly open up the flavors and aromas of whisk(e)y. It would be an interesting experiment to see if the same held true for not only other spirits, but higher proof meads and wines. Exploring I shall go. @@benknotes9450 check out the Whiskey Tribe. They did a test about a year or so ago. Adding 1 or 2 drops of water to a Whiskey opened up the aromas and released many of the flavors that were previously muted.

@@benknotes9450 it has more to do with causing the oils to release and float on top of the water then it has to do with dilution when it comes to whiskey.

did you put more cubes in the steel one? might be me not paying enough attention. Remembering high school physics (which was way too long), there are coefficients to calculate how much energy a material will take on when dropped in a warmer liquid. That being said, this way of testing is more fun and you can check for taste :)

I'm new to this Channel and I am trying to do a home grown grapes wine and second home grown grape and pear wine. I've been watching some of your Meads and was wondering have you ever tried two different types of honey like we have a local Wild Honey which has a floral taste to it mixed with like a sour wood or orange blossom or summer berry honey? This is my next attempt; just wondering what you thought would go well with two mixes. Thanks in advance

If you're new, I'd advise to use known recipe and keep it simple to start. There's a lot of nuance in even a simple wine or mead, no reason to overcomplicate it right off the bat :)

Like I said the other day, Stainless steel is always going to win this competition. Granite is nearly an insulator rather than a conductor of either heat or electricity. Steel is a pretty decent conductor of both, but as you noticed, stainless steel doesn't react to foods or biology, which is why it's used for medical purposes, like hip replacements, where as some of the other conductors do react. While Copper would better chill your drink, it would be far worse because it's so reactive, your drink would certainly taste metallic if the drink is at all reactive (like a tiki drink for example). The only thing I'd look out for with steel cubes is that they are nickle free. Nickle can leech, nearly as bad as copper, and there are people who are quite allergic to nickle. With how bad I've seen contact reactions get, I can't imagine that a consumption reaction would be good for them.

Thank you for the experiment, but aren’t the stones smaller in size while the steels are larger? Wouldn’t it have been a better test if their weights were measured and placed equally in the glasses? Even if the number of pieces is the same, I think the steel takes up more space and could be heavier.

Maybe, just maybe, the stainless steel ones react more with higher alcohol like whiskey. OR maybe whiskey "experts" are like HiFi "experts" who claim they can tell the difference between MP3s and Lossless Digital files. Human beings aren't technically capable of hearing the difference. LOL
