I made these yesterday, but I substituted butterscotch chips for the white chocolate (as I'm not a white chocolate fan). I have to say Ohhhh Myyyyy Gawd! SO delicious! I used a small cookie scoop and this recipe made 2 1/2 dozen cookies. Thank you so very much ~ what a hit! I WILL be making these again :) Happy Holiday's John!!

One of my fave old recipes is an “angel cookie” with white choc & dried apricots. Haven’t made for yrs, probably cream cheese also. I like how the apricots balance the sweetness. These look fab of course. Might try with salted nuts...

Hi John! I LOVE your French Pastry-Series (Macarons, Profiterole, Cream Puffs, Eclaires) so much! I'm set to celebrate my 30th birthday next year in a Marie Antoinette (2006) theme and the only missing treat are PETIT FOURS - the extra pretty ones with flowers and all the pastelly goodness. Can you make a video how to make those? I've seen other tutorials - but they just aren't as good as you are! :)

You said 180grams of flour but on the bottom on the video it says 150g. Also, when I click on your recipe link and scroll all the way down to check out the recipe I see that you have 8oz of white chocolates but when I fill a cup of white chocolates and weigh them out I get at most 6.3oz. This is all very confusing and I really want to make the cookies with your recipes but I’m so so stressed out about my ingredients going to waste. Macadamia nuts are not cheap. 😭
Hi John! Quick question, sometimes in your recipe website the procedure is different from the video. Which one is the more updated or your preferred way of doing? because sometimes in the recipe you add the butter right away while in the video you add it after the dry ingredients or something like that.

Tried exactly. They were really flat. Not sure why given the exact gram measuring. Only thing I can think is the Callebeut Callet white chocolate instead of lower butterfat options. Not sure. All ingredients were new.
