Whole Wheat Jaggery Christmas Plum Cake | Eggless & Without Oven | Yummy

Made this with few changes: Added 2 eggs instead of buttermilk N added one spoon cocoa powder and half tsp vanilla essence Cake came out v well..tasty,soft n perfect

Here's the recipe written. Am making it today. Will update once done. In a large bowl, mix and soak for 1 hour: 1/2 cup jaggery 1/4 cup hot water 1/4 cup juice 1 tbsp coconut flakes 1 tbsp dates chopped 1 tbsp dry cherries 1 tbsp apricots 1 tbsp black raisins 1 tbsp yellow raisin 4 tbsp tutti fruti After 1 hour Add 1/4 cup oil In the same bowl sieve together: 1+1/4 cup wheat flour 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp cinnamon powder 1/4 tsp cardamom powder 1/4 tsp ginger powder 1/4 tsp nutmeg powder 2 tsp corn flour Fold and mix gently. Mix well 2 tbsp curd 1/3 cup milk Add the milk+curd mixture gradually to make a thick batter. Now add 1 tbsp chopped cashew 1 tbsp chopped almonds 1 tbsp chopped cherries 1 tbsp chopped pistachios Mix gently until everything is mixed well. Pour in a 6 inch greased baking tin. Garnish with more chopped mixed dry fruits. Bake at pre heated oven at 200°C for 50-60 minutes. Update (edit): I made a mistake and used 1 cup hot water in the beginning in place of 1/4 cup. So this took much longer to bake. I baked it initially at 200 for 60 minutes, but the centre was still gooey. So reduced temperature to 175 and baked for another half an hour. Still the cake was not baked properly. It was simply too dense. After 1 hour 45 minutes, I gave up. Took it out, and the centre sunk. Now I have a block of cake whose edges are hard and dark and the centre is still dense and soft. Will try again with right amount of water. Update day after: the cake set and is edible.
