In this video:
The ancient Mesopotamians made a type of salty, sour cheese very similar to cottage cheese that dates back to at least 3000 B.C. A common legend is that it was invented when a desert traveler filled his sheep stomach saddle bags with milk prior to beginning his journey. As the traveler and his camel traversed the hot environment, between the sloshing of the bags caused by the camel’s gait, the heat of the sun, the milk and the natural rennet from the sheep stomach, the entire process produced cheese curds.

The idea of the first cheese being caused by storing milk in a stomach reminds me of a video I watched where a guy went to Sardinia to explore their food culture. Sardinia is well known as the homeland of Casu Marzu, the infamous "rotten cheese", but besides trying casu marzu, he also tried another cheese that was made in a goat stomach. Apparently it was even more awful than the casu marzu. (BTW, yes, I know, my name is Sardinia. I picked it when I originally invented the "Mimi Sardinia" character because it sounded Mediterranean.)

My interpretation: a calque to German Hüttenkäse. The place where milk is processed in German is called Käsehütte in some regions. Other large scale processing plants share that term. Processing/refining metals is called "verhütten". This is all the more probable as the other term she gives (smear-case = Schmierkäse, spreading cheese) is clearly German in origin. The other meaning of "Hütte" of course is a small building with only one room. -> Cottage.

A Pennsylvania Dutch treat is cottage cheese and apple butter. 4 parts cottage cheese to 1 part apple butter mixed together is a good ratio. Apple butter isn't the same everywhere, unlike cottage cheese, and for the best taste I suggest Musselman's or other Pennsylvania Dutch based recipe. I've had it with a southern store's brand and it really wasn't that good, which greatly affected the taste of the mix.
