Hairy tofu is what its name suggests: tofu with wisps of white hair growing out of it.
The hairs are the result of a fungal spore that inoculates the tofu, giving it a texture akin to blue cheese.
It’s a beloved specialty in the Chinese province of Anhui, where people eat it braised or pan-fried. We went to a town in Anhui to try it out.

I am always perplexed about how humans discover these kinds of foods. Like was tofu left out for 3 days accidentally and someone decided I'm still going to eat it even though it's hairy and then boom? Now it's common?

Ummmm. I’m assuming you’ve never heard of Roquefort cheese? It’s made of ewe milk and left in caves for weeks…… and it’s expensive and snobby food. From France….. 🧀 So, yeah. Humans have discovered weird and gross ways of eating food. This includes beer and wine. And bread.

Many times poverty and/or starvation plays a part in if someone has the luxury of "throwing out food". Even today there are people poor enough to eat garbage for example.

Most of early human history was people starving with little food. When you're hungry you'll try anything since the only other option is death. It's sad, but luckily things have progressed for many.

Makes sense. Anhui is seen as the birthplace of tofu and it’s many derivatives. Even stinky tofu which was created in Beijing is seen as an Anhuinese dish because legend attributes the creator to have come from Anhui.

A bit disappointed the taste wasn't described. Does hairy tofu taste like blue cheese as well as mimic its texture?

@@kiattim2100 Yep, Chinese democracy already exists. There are 2 Chinas just like how there are 2 Koreas: 🇹🇼 Republic of China (ROC) and 🇨🇳 People's Republic of China (PRC). ROC was born 37 years prior to PRC (Japanese invasion terribly weakened ROC as communists bravely hid in the mountains letting their fellow countrymen die fighting) so ROC is the OG China or real China but unfortunately most people outside Chinese world are unaware of it. ROC as intended by Sun Yat-sen is a China "of the people, by the people, for the people" where "people are the emperor". Its democracy is not a copy paste of the West's but an improvement as citizens have additional rights of referendum and recall. Chinese people are very capable of freedom and democracy despite what wumao/gongfei say, and the ancients prove it. Mencius from 300 BCE said "Most precious are the people; next come the spirits of land and grain; and last, the kings". All that's left is to free the mainland and restore China to how it's meant to be: powerful yet free, benevolent, democratic 🇹🇼

Someone commented on another video, that it tastes like cream cheese, and also that it is very salty so you’re meant to eat it with bland stuff, like plain rice porridge or rice. By that description, it sounds like it might taste like dou fu ru, a fermented, salty tofu that comes in jars of seasoned oil.

Huh wont it be considered as spoiled if its fermentation going for days? Fyi tempe only need half a day to fermentated. If its pass of 2 days even in refrigerator stored its going to be spoiled. And maybe can only be cook for nasi Tumpang. Which use not too long spoiled tempe. But i dont think spoiled bean curd(tofu) is safe. . . .
