All three streamers do a lot of the same things. You can stream using Apple Airplay 2 over Wi-Fi, or over Bluetooth. You can play music from Qobuz, TIDAL, Amazon Music and more, and connect to your equipment in a number of ways: via an analog output, through a Bluetooth speaker or headphones, or via an optical output to pass through the digital signal to another DAC.
The Pro and Pro Plus add support for Chromecast and Roon, plus an upgraded DAC, and more inputs and outputs. The Pro Plus steps up the DAC all the way to an AKM Velvetsound model, plus adds a higher-quality op-amp to the output stage, so it's the choice for ultimate sound quality over streaming.
However, the Mini could make sense if you were just looking to pass the signal through an optical output into your favorite DAC or integrated amp. The system is flexible and easy to use with the Wiim app, and like Sonos or HEOS, or other whole house systems, you can group the various Wiims together in any way you like.
