South African style Braai Lamb Roast
Roasting a Lamb on hot Charcoal is an unique but very satisfying experience.
You will love it if you take the time to prepare and manage to get it right
I have used a Barbecue Drum and cook with Restaurant quality Charcoal which burns longer, hotter and with very little smoke.
I initially roast with double foil covering with the Lamb in an roasting pan tray and I do NOT start by placing the Roast directly over coals.
To begin with I roast in the Barrel oven with hot coals either side of pan , but not directly under the Pan. The Barrel will have the lid down , towards the end roast I take the foil cover off and roast as in oven , barrel lid down and then finally lifting lid continue roasting "Braai" or barbecue the Leg of Lamb directly over hot coals.
