Wolfburn is the most northerly distillery on the Scottish mainland. In 1821 William Smith founded the distillery on the outskirts of Thurso. It got its name from the watercourse of the same name.
The distillery is built of hard slabs of local Caithness stone. You can still see some of them. Smith invested heavily in the distillery and quickly became a major malt whiskey producer. In 1826 the annual production was 28,056 "Total Gallones of Proof Spirit" (about 125,000 liters). Wolfburn was operated by the Smith family until 1850.
Wolfburn now produces about the same amount as it did under William Smith's leadership. We were allowed to visit the Wolfburn distillery and got exciting insights that we don't want to withhold from you.
