In Bulgaria, people have somehow become accustomed to seeing depopulated villages and abandoned houses. But there are still places high in the mountains where Bulgarian villages are alive with farms, livestock, and even tourists. But here, too, someone may be bothered by the crowing of a rooster, a barking dog, the smell of a barn, or cow dung on the road.
What do we really want? I want a thriving countryside with healthy forests and meadows, cared for by grazing livestock. And clean, healthy food made at home, according to old recipes and traditions, by people who have a good relationship with the environment, animals, and other people.
