Wood-Fired Oven How To: Seeded Sandwich Loaf of Bread Baked in a Pizza Oven

In this video, I share the recipe and the process I go through to bake a seeded sandwich loaf of bread in my wood-fired brick oven (pizza oven) that we built at home.

Makes 2 Loaves
INGREDIENTS
850 g Bread Flour
150 g Whole Wheat Flour
640 g Room Temperature Water
14 g Active Dry Yeast
16 g Kosher Salt
30 g Extra-Virgin Olive Oil
4 tbsp Steel-Cut Oats
2 tbsp Sunflower Seeds
2 tbsp Chia Seeds
2 tbsp Milled Flax Seeds
Rolled Oats to top
RECIPE
- After grilling or baking pizza in the Pizza Oven, move the coals to the edges of the oven and let it sit about 2 hours
- Mix the Flour, Water, Salt, Yeast, and Oil in a bowl until it forms a cohesive unit
- Dump it out onto the table
- Knead the dough for about 8 minutes until smooth
- Add in Seeds mixture to the dough
- Knead the dough another 8 minutes until Seeds are evenly distributed throughout the dough
- Rest for 45 minutes
- Deflate the dough a bit, flatten, and divide into 2
- Preshape each half by forming them into tight balls
- Rest 15 minutes
- Shape the dough to fit into your banneton basket or bread tin
- Spray the tops of the loaves with some water and top with Rolled Oats
- Place into the banneton baskets seam side up, or into the bread tins seam side down
- Rest for 90 minutes
- Clean out the oven about 1 hour before baking
- Wipe the oven floor and place a cast-iron skillet into the oven about 5 minutes before baking
- Score the bread
- Place ice cubes into the cast-iron skillet and place that into the back of the oven to start generating steam
- Place the loaves into the oven, directly onto the hearth, and bake for 24 minutes
- After 12 minutes, open the door to let out some steam
- Enjoy!

Thanks for your time and detailed work. I've got wood fired myself and most of the time I make pizza. I did make a bread before but I think I kept it too long inside. I used the same percentage of water, about 63% and I'm using metal forms for bread. Great work, thanks again.

Thanks for the video. I a making a outdoor woo fired oven. The base is ready - 1.2M X 1.2M X 1.0M, made of building bricks, filled in layers - from bottom up - broken bricks, stone chips, sand, empty glass bottles, sand an floor of the oven - building bricks. I have given it tie to settle, and then would be making the dome - 0.8M (height and dia) of the oven. One query from you, what should be the opening size - length and height. Thanks in advance

Would love to see how you made your door? As I’ve been doing pizza for years but new to bread and only have a thin metal door

The door is made of hardwood. I used 3/4" thick red oak, but any hardwood should work. The total thickness of the door will be double the thickness of the board. But basically just cut the boards so you can build two layers. One layer going horizontal, one layer going vertical, and then stack those layers on top of each other so the boards are criss-crossing. And then screw the layers into each other using stainless steel wood-screws. Then cut the door to size and shape, attach the handles (cast-iron or stainless steel), and then I put some flat gasket (green egg gasket) on the top and sides of the door and rope gasket on the inside of the door to create a better seal. Here's an album of pics that should help you get an better idea. (photos.app.goo.gl/2D5yk3miFWbJf1RA7) It's important to use only materials that are okay burning. Specifically stainless steel screws and door handles. Most screws are zinc-coated, which will melt at high temps and release toxic gases (though idk really if that's actually dangerous). If you build a wood-door, I think it's best to plan on it eventually burning up, at which point, you just throw it in the fire. It is wood after all, and wood tends to burn. But I've had my wood door for 6 months now, and it's been great. I only really use it for baking at temps below 500F, and use the steel door the rest of the time.

@@theandersonpizzaoven6996 how has the door held up? I'm building my oven now and thinking about the next step (the door). Also, when you put your door in, are you sliding it back past the chimney opening? I would assume yes, that way you cut off the heat escape.

How does yoir bread brown on top? My pizza oven does not do this? I have to re light a fire to get a flame to brown the top🤔

Not sure really. I don't think I do anything special. I think the key is getting the oven temperature right. If it isn't getting browned at all, maybe try putting the bread in at a higher temperature. If the bottom is getting browned, but the top isn't, then the floor is hotter than the dome, and you'll have to try to cool down the floor to match the oven temperature. You can do this by moving the coals out of the middle of the hearth sooner, wiping down the hearth with a damp towel (not too wet or too cold or you could crack the bricks), or laying down a damp towel on the hearth and closing the door. You really want the floor temp in the center of the hearth to be as close to the same temp as the back wall of the oven I think
