The Wood Oven is too cold (260°C). It is recommended that a wood oven is around 500°C when making pizza, which is why it's chosen over a kitchen oven since a stove can't reach those temperatures.
All sctatch pizza making is a labour of love because you do have to make decisions with the dough and heat. There are so many dough styles. Balance the water content, or if you make a starter dough. Pre heating the stone or the metal, even clay. Are you using a conventional, gas, wood or even charcoal oven. So many things change the flavor. Are you making the sauce and which one? You can obsess if you want. It can be very worth it as well
Absolutely kills me to see you load that pizza into the wood oven with the parchment paper. It's completely unnecessary and that parchment burnt to a crisp and stuck itself to the bottom of the pizza. In the oven or a pan sure. But on the ceramic / cordierite.. Nope. It's job is to retain heat and suck the moisture out of the dough for a crispy crust. While your thermometer was reading around 500*, the floor was likely closer to 600+ (much past the rated temp of parchment paper). Which is also why it's good to have a infrared thermometer and know how hot your stones / zones are. No issue with the cooking temp. Just fine for a NY style. But if you aim for a Neapolitan pizza, crank that temp up on the floor to 800* plus.
Pizza dough Sure... here you go ... 1 cup of of 00 type flour mixed with 1 cup of warm water with a bit of honey in it. Mix in a table spoon of yeast. Cover and let it ferment for about 1 hour . At this point it’s a bunch of mush Mix in gradually another cup of flour to the mix... Form into a ball and put it into a oiled up bowl with oiled up Saran Wrap on top and put in fridge overnight .... Take out dough approx 2 hours before use ... I usually let it sit in the fridge for 2-3 days. Hope this helps. - Marc

Mann - People that eat from the crust side first!!!!??? Same as the people that say "Pie" when referring to a pizza - as in: "Pizza Pie... and that's all I'm going to say about that.
@@TheAverageKitchen No - just irritates me got some stupid reason to see pizza folders. eat it crust first, and mainly "Pizza Pie" - which came from hearing my grandma in the 60's & 70's saying "Pizza Pie" and putting emphasis in those two words... That's it and voiced it knowing that there would be comments like this. It also bugs me when I hear Brits and others say Sedual
@@TheAverageKitchen Ha, I probably should have started with I liked your video and that I was searching for a video that compared "Smoked Pizza" to regular or standard cooked pizza.. I guess I let the eating the pizza eating from the back end take over my comment and then added other pizza eating don'ts to my comment.. I think - it just goes to show you - how you eat pizza depends on where you grew up or where you live... There are Pizza Folders and then there are "never fold a pizza" people... This might cross over to other pizza rules... Now - that's all I got to say about that. Now, let me ask about what I was searching for but never found. What do you think about "Smoked Pizzas"/ Not Wood Fired pizzas (which are maybe the best) but I am searching for opinions on smoked vs non smoked such as typical cooked pizzas... I hope that clears up and resolves a bit of my original and maybe miss worded comment.
