Great vid! There is a top pizzeria in NYC that uses just straight coal. Personally, I think charcoal and fruit wood are the way to go for flavor.

Thanks - I agree - I’ve never tried cooking with coal. In Wales we used to mine anthracite coal which was a very pure and clean burning fuel for fires so I’ve been told! 🔥🍕

@@Got2EatPizza When I was a kid in the 80's, during a recession, my dad told the gas company to get their meter off his property. We had a coal burning Wilkerson stove in the front room and the basement. I personally haven't used coal, but like I said Grimaldi's pizza in NYC uses only coal. You should do a coal video!

Hi! It depends on your budget and what fuel you prefer to cook with - I love wood cooking but its a lot easier to use high heat electric ovens now because they have developed them so much recently that they cook like gas and wood fired ovens. So at the moment - my pizza ovens of choice are high heat electric ovens (and I never ever thought I would say that even a year ago) as so much has changed. If you dont fancy electric, then gas is a lot easier than wood - so the Koda 16 or the new Max 2 oven (I haven't got the Max 2 but it looks amazing!)

Howdy lady. Glad to hear you have a Kamado cooker.THATS the cooker to smoke on. Not that other pizza oven. When your using mixed fuels like this consider what you're trying to do. The charcoal is the primary fuel source. The wood is flavor. You mentioned how your trying to use as large of pieces of wood that you can . Instead use small chunks more often so you get a cleaner burn and clean tasting smoke. Just as you should do with your Kamado. This will also help keep your temperature running more consistent. So here's a suggestion. Do a video of smoking something in the Kamado then use some of that smoked food on a pizza for extra flavor. Fun video, have a great day.🔥🍕

Hi! Thanks so much for sharing! I’ve been using the Kamado Joe Junior for 5 years and really love it! We use that for our BBQ’s with the Canadian stone but haven’t thought about using it to smoke so will need to check out how to do that!

When I start the fire in my Karu 16 I make a bed of charcoal and put a couple of very small pieces of wood on top when the oven reaches a temperature of something around 200 degrees Celsius I add a bigger piece of wood after maybe 20 minutes I add another piece off wood and prepaire my first pizza and put it in but to be honest I still have problems with heat management when I make multiple pizzas sometimes the stone is too hot, sometimes the flames are too big or the flames are small while the stone is very hot or something else.... I like wood but gas is so much easier to use 😊🍕🍕🍕🍕

Yes! That sounds very much like what I do - I add kindling to set off the lump wood and then a big log to take it from there! 🍕🔥🍕

how hot does this get the oven and how hot does this get the stone?

This combo can get up to 600c in the Ooni Pro but it depends on the size of the grate - so average 12” pizza ovens it’s about 550c max and so managing the fuel to ensure it doesn’t get too hot or too cold is the skill.
