Dal curry with red lentil

200g dried red lentil(Wash and drain)
1 tbsp olive oil
2 onions(Mince)
3 cloves of garlic(Mince)
1 clove of ginger(Grate)
Spice (can be substituted with curry powder!)
1/2 tsp ground cumin
1/2 tsp coriander powder
1/2 tsp mustard seeds(Grind into powder)
1 tsp garam masala powder
2 tsp turmeric powder
1/2 tsp dried chili pepper powder
400ml canned tomatoes (Peeled or diced)
400ml coconut milk
500ml vegetable broth(or water)
Salt
Pepper
2 tbsp lemon juice
3 handful of spinach
