How to pasta series sounds great. How well do yolks for pasta hold up to freezing? I've recently started dabbling in weights and have started to eat more eggs planning to lean towards whites, but we meals prep for my wife's grandparents so buying while eggs to use the yolks for other applications like this makes more sense

What you could've done is taking an ostrich egg yolk instead of the four chicken egg yolks but over all just a super cool series. Hopefully you continue making this kind of content!
In Argentina we actually have a name for big raviolis and it's "sorrentinos"! They're not as big as the third one you made but but that's the closest size!
